Crit, the best way is always to let it dry on the stalk but it will also be ok to cut the stalk and hang upside down-like stalk up and seed pods hang down in a dry paper bag and hang in the sun outside from maybe the top of the porch or somewhere critters won't get them and eat them before you can get the seeds. But that should be ok. The paper bag or net bag will catch any seeds that might fall out and still let air get in to help the drying process.
