OK FOLKS!! Here it is!! The secret recipe for my World-Famous
High-Protein Blueberry Muffins
Oven Temp: 400ºF
Baking Time: 20 minutes
12 Muffins (or 9 large muffins)
1/4 cup butter
1/3 cup brown sugar, packed
1 egg
1-1/2 cups whole wheat flour
1/3 cup wheat germ (or more)
1/4 cup dry milk
1-1/2 tsp baking powder
(Add 1/2 tsp salt if using sweet butter)
1 cup milk
1 cup blueberries, fresh or frozen, halved.
Crumb Topping
Combine: 1/4 cup brown sugar, packed
1/3 cup whole wheat flour
1/2 tsp cinnamon (or more)
Cut in: 1/4 cup butter.
• Cream together butter and brown sugar. Beat in the egg.
• In another bowl, combine dry ingredients. Mix well.
• Add dry ingredients alternately with milk to the butter mixture. Stir until combined. DO NOT over beat. Gently fold in blueberries.
• Fill greased muffin pans. Sprinkle Crumb Topping over each muffin.
• Bake at 400ºF for 20 minutes. Let muffins cool a few minutes before removing from pan.
If you SKIP the Crumb Topping, add the cinnamon to the dry ingredients of the muffins.
Nutritional Note:
The wheat germ complements the flour and almost doubles the protein value. The dry milk supplements the flour and increases the protein value by 50%.
