Beat in the egg. • In another bowl, combine dry ingredients. Mix well. • Add dry ingredients alternately with milk to the butter mixture. Stir until combined. DO NOT over beat. Gently fold in blueberries. • Fill greased muffin pans. Sprinkle Crumb Topping over each muffin. • Bake at 400ºF for 20 minutes. Let muffins cool a few minutes before removing from pan. If you SKIP the Crumb Topping, add the cinnamon to the dry ingredients of the muffins. Nutritional Note: The wheat germ complements the flour and almost doubles the protein value. The dry milk supplements the flour and increases the protein value by 50%. Not my photo |
