I keep all kinds of canned beans on hand and we make a salad with them. I open and rinse two cans of beans, shred carrots, cut up green pepper and radish, sometimes celery, hard boiled eggs, cooked rice, cooked corn and use cottage cheese instead of salad dressing. It's filling and healthy!

Today I sautéed onion,parsnips and celery, then bacon. I wilted some collards added chicken broth and the veggies and some cannellini beans and they are all simmering now and it smells wonderful!

I use the Jiffy corn bread. But do it in a cast iron fry pan. Mom always made sure the pan was preheated well so the batter would sizzle when poured into it. Surely do miss her.

I love soup and make it all winter.
Today its "Orange Soup" made with sweet potatoes ,butternut squash and apples Granny Smiths.
RUTHS SQUASH SOUP (ORANGE SOUP)
1 small diced onion
3 T. unsalted butter or canola oil
2 1/2 teaspoons curry powder
1 teaspoon ground ginger
1 teaspoon ground cinnamon
2 cooking apples, peels, cored and sliced
3 med sized sweet potatoes or squash equivalent (about 1 3/4 lbs) peeled and cut into chunks
2 T. chopped parsley, if you have it
4 cups chicken broth
salt and pepper to taste

In heavy pot, cook onion in oil/butter for 5 minutes over low heat. Stir in spices and cook for 2 minutes.
Stir in apples and cook another minute.
Add rest of ingredients, bring to boil, cover and simmer one hour or until all quite tender.

I use immersion blender to puree, and add extra chicken soup if too think. Reheat and adjust seasoning if necessary.
Better the next day after flavors blend.

Any squash will do. I used sweet potatoes and some left over butternut. I also substitutrd fresh ginger for half of the ground.

Cornbread,use the recipe on the package and add an extra egg. That makes it moist.

I usually hate Brussel sprouts, but made them the other day, & they weren't bitter....I soaked them in salted water for about an hour, par boiled them, then marinated them....yum.
