I've been so busy with me being back to work and the kids being back to school and some other personal stuff going on I haven't had time to get on for a few. :( Tonight I am waiting on the corned beef and cabbage I have in the crockpot. I didn't start it early enough because I would have liked to have eaten by now. However it is smelling really good!

Robin here you are wishing you had more people to cook for, meanwhile I'm wishing I had less! lol It's just so hard to please 5 different taste buds with one meal every night! If I were you I would buy myself a small but thickly cut filet mignon at least once a week and bake a potato with it, or ake some homemade fries. No waste there, cuz you can use just a potato. Othe rideas I have are trying half prepped food in the freezer. I finf making meatballs a head and freezing them works very well. If you freeze them on a sheet pan then dump them in a storage bag it is very easy to pull just as any as you want out. I've frozen them before browning, and after browning, both work well but freezing after browning makes it more convienent if you decide you want to drop them in the sauce while still frozen. Not browning makes you have to plan and thaw first. Just buy a small can of sauce and add your own salt pepper garlic and basil. I have to add sugar to mine to please the family here. Another thing I like to freeze is homemade chicken fingers or breaded cutlets for chicken parm, again you can fry them then freeze them or thaw them and fry them the night you cook. I always bake the cutlets after browning them in a little olive oil. I like chicken parm with no pasta but I know lots of people have to have pasta with it. I actually just did that recently, I always do those two when chicken breasts are on sale. Another thing you could do is stuffed shells, but you need to get some of those small corning ware dishes. Pick out the right size for your appetite and prep up the stuffed shells like your making a full batch and just put in the amount you'll eat in one shot in each corning ware thing. I found some great ones that have tight fitting lids that make them perfect for this. I just put a layer of plastic between the lid to make sure they don't have any chance at freezer burn. Also marinating meat in small freezer bags would be convienent for grilling, then you can just pull out a bag of what you want and throw it on the grill. Make a single serving salad. I love marinated italian grilled chicken on a garden salad with ranch dressing and croutons. Mmm
If I can think of anything else I'll let you know. I do realize I've given lots of sauce recipes but I think there is a chance I'm the italian milkmans baby! lol jk

Thanks Meredith for all the good ideas.....even though I watch Rachel Ray's "Five Meals in a Day" I can never seem to plan ahead anymore....when I was working & had a family, I was organized to the nth degree....now 5:00 comes, & I'm tired, and I've planned nothing, so I grab the cottage cheese....I do usually have homemade soup in the fridge all the time, so I rely on that that until I'm bored with it....today I have left over beef stew from lunch out with my brother yesterday....Ooops...change of plans...son called to invite me for stuffed cabbage....

I'm trying something new for our dinner tonight. I boiled 36 raw chicken wings in a large pot of water for about 10 minutes with salt, cayenne pepper, onion and garlic powder. Then I put the wings in a colander in the sink to drain them for a bit, and placed them on baking pans with racks. I made one sauce using hot sauce and melted butter and spooned that on half (18) of the wings, and combined melted butter and bbq sauce and sooned that on the rest. Baking at 400 degrees for 20 minutes. Using the water I boiled the wings in to make rotini pasta, which I will just put some butter and grated parmesan on.

Well, the wings were very good. However, I'd rather just get them from a pizza/wing place. Hard to get the skin crispy in the oven so would have to deep fry them. Thought about grilling them, but not sure how that would be.

When I was young I worked in a pizza shop and they fry the buffalo wings then put them in the sauce. I think that's the trick to keeping them crispy. The sauce keeps them from crisping up. Going to make my homemade beach pizza tonight! : )

Meredith, that is the "correct" way to make chicken wings. I just wanted to try a different method at home.

Out to eat at Denny's after church this morning, and probably just subs soon for supper from the convenience store where both sons work. None of seem to have much of an appetite today and that is OK. No cooking for me. ☺

O my beach pizza came out good. I'm eating it now. A few mishaps tonight, you'd think I'd be able to make it without errors by now. After the first rise the dough was way too sticky and I had to knead in more flour and allow to rise again. Then usually the crust is a tad not crispy enough and I cut it up and put a slice of provolone on top and heat for about 30 secs on the pizza stone. But this tie it completely burnt the bottom! Not sure if I over oiled the pan or if maybe there was more sugar in the dough than usual, or perhaps I had the pizza stone too low in the oven. Good thing it was only four slices out of 16! : )
