It's dinner time, whats cooking?
After two days of celebrations for our eldest son's 22nd birthday which was yesterday, I cooked today. I made baked breaded fish filets and baked brussell sprouts with chopped onion, green pepper, sliced garlic, butter, grapeseed oil and salt and pepper. Last night I made an avocado dip with mashed ripe avocados, mayo and sour cream. Had a dollop of that with dinner today.
I love avocado! Tonight I had dinner at a friend's house...chicken in salsa....& a wonderful apple pie, still warm from the oven.....

Leftover sausage and peppers, chili, salad and green beans. Chocolate cake later.
made a grilled cheese.. and had a brownie!!
Going out to lunch with a bunch today....a new restaurant opened in town, & I'm hoping we'll try it......

We had leftover brussell sprouts with some corn added, hot dogs and mashed sweet potatoes. This time I did NOT mush it all together, it was separate. LOL ☺
How did you prepare the sprouts, Dave? Not my fav veggie, but maybe I'd like them more if I cooked them differently....Our bunch tried the new place, & it was a good experience for all of us....I'll go back....
I cut the fresh, raw brussell sprouts in half, baked them with sliced garlic cloves (the whole head), a diced onions, a diced green pepper, salt, pepper, sage, grape seed oil and melted butter. Yesterday I baked this mixture uncovered at 400 degrees for about 30 minutes and they were just done. Today with the addition of the corn and another 20 minutes in the oven at 350 degrees they were soft and I liked them better. My wife loves them, but I do not and tried to make them a bit tastier. Seems like I succeeded and they are now gone.
Yeah, that sounds better than just roasting them....I might give them another try.

For Sunday dinner I have made pork chops in the crockpot with apples, onions, & cider....also pickled beets, butternut squash, & whatever my sister brings......

Just put a strawberry/blueberry crisp in the oven that we will have for dessert.

I made a home-made steak and cheese pizza for dinner today. Mixed left over garlic mashed potatoes into the dough. It came out great.
We had chicken, Mac&cheese and a salad. DS's family is still getting meals every other night after the birth of their baby. They have a great community of friends. Between their church and a MOPS group they are getting spoiled. I think it continues for at least another week. Baby Phoebe is filling out nicely herself. Such a cutie!
You're a creative cook, Dave! Jan, lucky your son's family has such great support....makes a big difference in your life! Today I made beef, barley, cabbage, & beet soup....very hearty.

Continuing on the steak theme (I took too many minute steaks out of the freezer and had to use them) I made steak and cheese quesadillas for our mid-day meal today. My wife starts work at 1:30 so dinner was at about 12:30. Served them with sour cream and home-made avocado dip. Bueno! ☺
