This is actually an easy swap for ALL of us here. We know each other prettttttyyyy goood (a la Larry David) .. so there should be no problems at all in coming up with that 'special' ringing in 2009 gift for any of us. And if we don't, there's plenty of time to do so
It doesn't have to be restricted to crafts, can be anything .. that plant you know will grace your buddy's garden and bring a smile when it starts blooming .. or even a jar of very much sought after preserves that will delight your sistah in the mornings or tea time.
Not seeking commercial nor monetary value on the gift.
Just a gift that says: "I am glad you are my Sistah and with this, I wish you the best for 2009".

Smoke Salmon
The way I do it was taught to me by the "chef" at a restaurant I worked at it has a smokey / salty taste to it but is soo good. We used to make it up and freeze the extra as the smoked salmon salad was a fav of the staff and customers.
We used the packages of frozen salmon you can get at Sam's using about 4 fillets per the recipe below

Get some wood chips ..get a tree branch cut it into small pieces and dry the pieces over night in warm oven (oak, maple..preferably a hard wood)
Mix together
1/2 C. + 2 T. Kosher Salt
1/4 C. +1 T. packed brown sugar
1/4 C. + 1 T. Sugar
1 1/2 T. Fennel Seed
1 1/2 T. Black Peppercorns
1/4 C +1T. Dry Onion Flakes
Add white wine & lemon juice til just moist

cover both sides of salmon & wrap in saran wrap snug
place in a pan that you have another one that will fit inside and once the pieces are in the pan put the other one on top of them weigh them down with something heavy and put in the frig over night.
Next day drain the juice off, unwrap and rinse each piece off making sure to remove any seasoning left on it.
in an old bread pan or 9x13 pan put your wood chips
Place a wire rack over the top of the pan and lay your salmon pieces on it
cover it with foil making a tent but make sure the edges are sealed.
make a small slit in the top of the foil
Place this pan on a burner on your stove (mind you we used a gas stove not sure on electric as I have no t tried it yet.)
set burner on low heat and leave until smoke is coming out of the slit you made. give it about 5 min after smoke appears then turn off. Set aside and let cool.
Once cooled you can wrap each piece and place in frig until ready to use or freeze until you are ready to use if not with in the week.

The salad we made was fresh mixed greens, wtih a small handful of almonds, a thin slice of red onion cut in half and separated, about 3-4 strawberries sliced thin and maybe roughly 1 T. of balsamic salad dressing...mix together and place in bowl or on plate and garnish with a strawberry sliced but still together at the top so you can fan it.
The salad dressing tones down the saltiness of the salmon.

Jaye, if you were a little closer… some days I’d even contemplate shipping… When it gets to that point she goes to spend time with grandma so I don’t strangle her.

She’s a wonderful kid, but I’m her parent so of course I don’t get the benefits of having taught her how behave, she does that when she’s at her friends houses *sigh* well at least she is well behaved at her friends houses.

I cooked a pot of Brunswick Stew yesterday. Thought of your leftover ribs and turkey as I was fixin' it. Man O Man wouldn't Kathy's leftovers be good to throw in here.
