Laotians are very easy going people, it's a shame what Kissinger did to them, along with the Cambodians. They too appreciate a good bottle of VSOP brandy! Wonder if you grow any kaffir lime leaves? They use that in their cooking too...and lemon grass...Thai basil...

Very possibly no power. Often Shari doesn't have the internet up. Tonight there was a stem with large leaves brought with the Pho. Could not tell exactly what it was. Had a hint of perfume to me. Something I have smelled in a cologne. Jasmine? Sort of sweet. Already had lemon grass and cilantro in the soup. My grandma used to boil the herb just for the fragrance. She says it soothes her. I love the lemony taste when sliced real thin, and stir fried with your meat, garlic and sliced onions. Cook that one day...with soy of course!

Well I didn't eat much of it since it had tripe in it. I love all kinds of the fragrant herbs. The aroma is what makes a dish taste so good.
Darling Christi..Houston is the nation's Pho capital!!! Each time I'm in Houston, that's what I have for lunch. I love meatballs in them!! Just the fresh beansprouts, with Thai basils drive me over the edge. I also use liberal amounts of plum sauce and chilli. Not a fish sauce user here, too pungent.
Yes, I get hungry right after a big bowl of Pho!! Another great Vietnamese dish that I just introduced Kel to is Pate' Chaud. It's a sandwich with meats and veges. Sorry Tman..I think we've just hijacked your thread!

I have grown a large clump of lemon grass from pieces bought from the store - can someone tell me how you use it? By that I mean do you use the whole stalk or just from lower down?
BHM, just about 6 inches from the root end. Remove a few outer leaves, till you reach the tender part. You either lightly crush the end or have it finely sliced. It's also delicious in curries. Add a wonderful fragrance.

I'm waiting for my chef (Mike) to finish his paper so he can make us breakfast. Usually, bacon, eggs, biscuits and sometimes cheddar cheese and tomato. Of course, since he retired this is actually our brunch and we don't eat two separate breakfast and lunch. aaahhhh life is good.
