I had slow cooked pork, roasted potatoes and Cole slaw, too. Heehee
cube steak sandwiches today. DH worked a 10 hr day. He'll be doing that all week.

Pasta with olive oil, garlic, poultry Italian sausage, asparagus, Anaheim peppers and sprinkled with shredded parm Romano cheese, mmm, so good
Went to Applebee's. Fundraiser for the school where we used to teach. I had grilled Dijon chicken and Jeff had blackened tilapia.
Went out to Longhorn's Steakhouse and then brought home ice cream for milk shakes
We went to our favorite restaurant tonight, which is Greek. Wonderful wife had a salad, foot-long hot dog with all the toppings and Greek french fries (fries, Greek dressing and feta cheese - fabulous!). I had an Italian sausage patty with green peppers, onions and provolone on a bun with the Greek fries. I started the meal with Prime Rib with mushrooms soup. Excellent meal for a very reasonable price.

oh FYI the crab stuffed mushrooms at Longhorn's are DELISH!!!!!
I wish we had a Longhorn's in our area. The commercials look really good.

Have to make something to bring to a dinner party given by my "step"son who is a buddhist monk in NYC Saturday night. This is tough because there are no weeds growing right now! Whatever will I make? :) Well - I could dig Jerusalem Artichokes and make soup - but they sometimes give people gas, Maybe there is enough wild garlic to make more soup . . . Where is a big pile of Lamb's Quarters when you need them? I also have to take the train and the subway to get there.

We just finished dinner as my wife needs to be to work at 1:00 pm today. I successfully tried my hand at Pasta Carbonara. In addition to the bacon, I added sauteed sliced baby portabella mushrooms, sliced green peppers and onions, green peas and imitation crab meat. I've always been leery to try making this dish for fear the eggs would curdle or scramble. It turned out delicious and I will make it again.
Stir fried chicken breast, red peppers, onions and mushrooms, with lots of soy sauce, over rice.
Last night spaghetti puttanesca and a tossed salad.
P.S. - After I posted this I added a handful of frozen leaf spinach. I keep a bag of it to throw in stir fries and make myself feel healthy. The stir fry was super yummy.

I went to the bakery in Waterbury before checking on my Mom....waited in line 15 minutes! Never realized my brother was standing about 10 people in front of me....anyway, bought hot cross buns....that's what I'm eating today!

I was adventurous again and made fried fish with my own batter. We had plain haddock filets in the freezer, so I made a batter using pancake mix, an egg, a packet of yeast, salt, cayenne pepper, garlic pepper, about 2 tsp Splenda/sugar mix and about 1.5 cups water. That was the perfect texture for the fish but there was left-over batter. I added some flour and made hush puppies. I fried the fish and then the hush puppies in canola oil using my good stainless steel pan. Served it with store-bought macaroni salad, potato salad and cole slaw. Turned out quite delicious.

Got up at 6:30 this morning to hand grate the potatoes for the kugli.....it will be ready in about 20 min. Wish someone else in the family would take over from me, but no one wants to.....
We went to our favorite restaurant after church for their Easter Platter. Two eggs, toast, home fries, pierogi, slice of ham, kielbasa, placek and fruit salad. Very tasty, or as they say in Polish "bardzo smaczne". The restaurant has a Greek theme, but the owner's mother is Polish and his father is Lebanese. Great food and service.
