I was lazy today and we had Healthy Choice Roasted Sesame Chicken dinners. Chicken in a sauce, rice, broccoli/cauliflower mix and a peach crisp with a gingersnap topping. It was very good.

Onewish1, That is cool. I wish you would try it and tell us how. I could send you my recipe for a 25 lb all Porky Pig Loaf that I made last summer for you to make to go with it. Big is Better. Bacon and Chocolate. Yummy.

I was going to make another faux piggy for the Super bowl if the Patriots had won, but alas, they didn't, so we will all live another day. It is a killer but it is actually good. I cooked it on a rack so all the fat drained into the a special container that DH made out of putting two big foil roasting pans together. I got the idea from another one I saw on line that was done in a smoker for a super bowl party. I then tweaked the recipe and ingredients and cooked it in the oven. I figured I would have more control over the temperature and I could brown it more evenly. Oink.

We are having diner at friends tonight, but DH has made a big loaf of no knead sour dough bread to take and the smell is driving me wild. Patti

Robindog, not a real pig, as I made a loaf out of layers of cooked bacon, ground spicy pork sausage, layers of smoked ham, with layers of stuffing made with veggies, bread and, naturally, more bacon and then I encased those layers in a pork meat loaf mixture and then wove a top out of more bacon. The head is just sculptured out of the ground pork and part of the end of the ham that I had sliced up to layer in the body. I tried to make it look as much like a whole pig as I could. It was for a memorial party for a dear friend who adored anything made with bacon. He would have tried to eat the whole thing himself, even at age 86. Patti

luvsgrtdanes, thanks, I could be very happy with your chops, sweets & peas tonight. We are doing just doing tacos for the super bowl.

At the Dinner party we went to last night the hostess cooked a yummy cod with a pecan crust and roasted root veggies with a big salad that she served with my DH home made sour dough bread. She baked a fudge chocolate cake with cream cheese icing for desert with fruit. Pretty tasty.

Here is a loaf of DH's bread that he makes about every other day during the winter. It always makes it with slight variations with depending on which flour, seeds he uses or if he makes it with a sour dough starter or beer etc, but ti always great. Patti

Superbowl party made a gluten free cake and going to shape it like a football.
Made the most outstanding frosting.
Mocha Frosting
In small chilled mixer bowl dissolve 1 tsp crushed instant coffee crystals in 1 cup whipping cream, beat on low speed till slightly thick, Add 1/3 cup sugar and 1/4 cup unsweetened cocoa powder, beat till stiff peaks form. Makes 2 1/2 cups

Well after a day of low-calorie Gatorade and saltines due to another bout with a stomach virus yesterday, I think I will be making some type of beef with brown rice for dinner today.

Patti, that "pig" fooled me! I would definitely try some, & DH's bread looked awesome. I'm starting to eat again, too, Dave, a sandwich for lunch & soup for dinner......feeling OK. Ronnie, that sounded like a wonderful Southern dinner.....
