I stir-fried yesterday's leftover brown rice with scrambled eggs and made cube steaks as the main course. The rice had green peas, onions and garlic already baked in so it was really easy. Almost as good as our favorite Chinese restaurant. :)

Back in the 1960's, a "female advice" book said to always, always, always have eggs on hand, since you can make just about any kind of omelet out of leftovers.

Now that "Egg Beaters" can be frozen for months, I always keep them on hand.

We had cream cheese and baked bacon on whole wheat rolls.

Both sons (ages 19 and 21) are home from work today and sick with this virus that I got over the weekend. So far my wonderful wife has not gotten sick yet.

Wife is at work until 9:30. I'll have to figure out a light supper for myself and maybe sons if they are up to eating later. Maybe some canned soup or Ramen noodles.

I just got here and saw the pig thing.It brought back memories.
A GF of mine who sculpts clay and pit fires it, lives in the country( for obvious reasons,too much smoke ) Every summer for many years she would have a "Redneck Road Kill" picnic. The main dish was a meatloaf made to look like a groundhog. What a riot.
Everyone came dressed in work clothes. The rest of the potluck was offerings like fried balony sandwiches, jello with teeny marshmellows,cheeze wiz in undercooked macaronie, etc.
I confess to a guilty pleasure of fried balonie sands.

Thanks Ge1836, fun to make silly food. I love the idea of a redneck picnic. Next summer, we may have to throw one.

An almost now grown daughter her DH own a restaurant in West Palm Beach called Maison Carlos which serves some pretty tony food, except they also server pigs in a blanket as an appetizer. It is fun to have some people ordering escargot and then others little piggies, albeit they are made with wild boar sausage in puff pasty and served with chilled homemade sauerkraut, french cornichons and whole grain mustard. It is was her favorite finger food as a kid, but the frozen ones. She has dressed them up a tad.

I adore spatzle. Not sure what we are doing tonight as my tummy is a bit off today. Maybe we will break out some of our home made frozen chicken soup and follow Robindogs lead and add some greens to it, maybe kale. Patti

veggy bean burger and a can of green beans - only twice a week - i did check the sodium on the beans - the kirkland brand has 180 which is not bad -of course we are out of that and had a birds eye case that costco use to sell which is 400 grams - washed them off three times to drain some off.
