schickenlady, you may save my marriage! DH came in last night with a scowl holding a couple zucchini and pronounced that he knew when he saw me planting 6 of them that we were doomed. I made two loaves of a dark spicy zucchini bread this morning. Haven't tasted it yet. But the relish looks like the perfect thing to do with a slew of them.

I might try a making a chutney recipe with some of them too. I found a recipe for some 2 day zucchini pickle spears this morning and will do those this week too as we have lots of dill ready to go. We have a zillion cherry tomatoes ready, so I think a tomato, cheese and zucchini pie will be happening this week too. Some of the full sized ones are turning now. Then there is the yellow squash. Glad it is a good veggie year, but I will be toting some of it all to town and putting it in random peoples cars. Patti

So if you printed it print it out again or you will have 36 - 1/2 pints!

Robindog, great plan for the curried summer squash soup. I could make the base and freeze it for winter. Currently I can't eat anything acidic, spicy, or with caffeine or chocolate and did I mention alcohol? Grrrrrrrrrrrrrrrr. Hopefully I will be fixed soon. Patti

I found a great sounding recipe for a dense chocolate zucchini cake. The zucchini isn't suppose to add flavor but tons of moisture. I will make it soon, and have my house guest rate it. Patti

SPICY PINEAPPLE ZUCCHINI BREAD

3 c. flour
1 c. chopped nuts
2 tsp. baking soda
1 1/2 tsp. ground cinnamon
3/4 tsp. nutmeg
1/2 tsp. baking powder
3 lg. eggs
2 c. sugar
2 tsp. vanilla extract
2 c. unpared coarsely shredded zucchini
1 c. (8 1/2 oz.) crushed pineapple, drained
1 c. salad oil
1 tsp. salt

Preheat oven to 350 degrees. Grease and flour two 8 x 4 inch loaf pans; set aside. In medium bowl, combine flour, nuts, baking soda and powder, cinnamon, 1 teaspoon salt and nutmeg. Set aside. In large bowl, beat eggs until frothy. Beat in 1 cup salad oil, sugar and vanilla. Beat until mixture is thick and foamy. Stir in zucchini, pineapple and flour mixture. Pour into prepared pans, dividing evenly. Bake 1 hour or until done. Let bread cool in pans 10 minutes. Turn onto wire racks to cool completely.

ZUCCHINI ORANGE BREAD

Bread:

4 eggs
1 1/2 c. sugar
3/4 c. oil
2/3 c. orange juice
2 c. shredded unpeeled zucchini
3 1/4 c. all purpose flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 tsp. grated orange peel
2 1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 c. chopped nuts, if desired

Preheat oven to 350°F.
Grease and flour bottoms only of two (8 x 4) or (9 x 5)- inch loaf pans. In large bowl, beat eggs until thick and lemon colored; add sugar gradually. Stir in oil, 2/3 cup orange juice and zucchini. Lightly spoon flour into measuring cup; level off. Stir in remaining bread ingredients and mix well. Pour batter into prepared pans.

Bake for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pans, cool slightly.


Glaze:

1 c. powdered sugar
2 to 3 tbsp. orange juice

In small bowl, blend glaze ingredients; spread over warm loaves.
Makes 2 loaves.

Thanks, I am off to Boston this morning to hopefully get a temporary fix at Brigham's tomorrow, Botok shots in my esophagus. Hope it helps my face too! I will share that recipe when I get back. I like the sound of that orange bread.

Last night I sauted onions, garlic then grated zucchinni then I added cooked rice. After it was hot, I added chopped fresh tarragon, salt, pepper and some lemon juice and cooked for about 2 min. more and served. It was a hit and super simple. I managed a few bites. Now I have to start dealing with the cukes too and a mountain of yellow squash. I should start doing stuffed squash blossoms so we don't have so many. Not complaining about the plethora, yet.

I will try to take some pictures soon. Lilies are spectacular and so are my weeds. Patti

Found a golf ball sized potato in the bed but nothing else. Obviously growing potatoes in a bed of leaves and straw is not working for me. But I think I am making compost in that bed with all the rain and heat. Compost is good . . . right?

Corn is beginning to tassle, pickin beans, grape and pear tomatoes and some about the size of a golf ball only a little bigger. Larger toms are loaded but still green. Yellow summer squash on the vine, pick in a couple of days. Zucs are slow this year and not doing terriblly well. WInter squash is blooming and the cukes are finally coming on. Now if I can just get rid of a couple of pesty groundhogs I'll be set.

Cant get through the veggie garden. So many weeds I cant begin
