Rachel Ray had her take on corned beef/ cabbage and a reuben sandwich. So, I did my version of it w/o the buns: made it into a casserole.
Browned up some ground turkey and onion, then added some leftover corned beef I had from a few days ago -cut up into small pieces. Added some applesauce. I made fried potatoes and put them on the bottom of the casserole, topped it with the meat stuff, then added sauerkraut on top and baked it in the oven for awhile then topped it with swiss cheese so it would melt. Pretty good. Different. RR made a thousand island dressing to put on top of her sliders. That would have been good on the side I think.

Thanks for asking Jen I meant to come and say it ended up coming out good. After we ate I sat on the recliner and passed out! Just like Irish thanksgiving!: ) Lol I haven't made it in years so the bright red water was making me think the crockpot wasn't cooking right! Thank goodness it came out okay ... I hate dumping that much food in the trash! Hope everyone's else came out yummy too! : )

Unique idea! I am mad at myself for falling asleep before putting the leftover beef away. I had to toss it this morning. I was planning on making some corned beef hash. Something I usually never do because I never have any corned beef. The few times I've made it, it was delicious though.

Chop Suey or Goulash however you want to hear it. Secret - When I do a whole box and its all put togather, I toss in approx 10 fennel seed right at the end and let it simmer for about 10 minutes.
