Had one of the best salads I ever tasted in a restaurant in Rockefeller Center which had diced raw squash in it, along with anchovies & capers and a whole bunch of other stuff - marvelous summer salad!

I usually put a nice rub on the Ribeye Roast and cook it in the rotisserie.

Tonight we had seasoned chicken breast cooked on the rotisserie, steamed asparagus, yeast rolls, cranberry, sausage-herb stuffing, twice baked potatoes and snickdoodles for dessert.
Cooking is good for the soul. ^_^

I'm thinking easy tonight. Cube steak, mushroom gravy, mashed potatoes, red beets, and a couple of Cackleberries I made Friday for an appetizer.
A short funny story, while I was making my eggs Friday. I decided I'd put too many beets in the bottom of my container to get the eggs well covered with pickling solution, so I reached in and pulled a couple out. After cleaning up for a birthday party later, I was caught "red handed". LOL Ric

You guys started me thinking about squash so when I went to the market I checked them out, they had the reg yellow squash and they had the Zucchini, but they also had the Spanish ones too, so for a 'change of pace'...

They're shorter, VERY sweet & more tender raw than yellow & zucchini. Probably shorter shelf life.. bought them yesterday and ate them today, doubt they would last a week in the veggie compartment of a fridge - more like 3 days, 4 days pushing it under ideal condit...

Wanted a change, usually I would cook broccoli or asparagus, but one gets tired of eating, (lol)
