I used this recipe for the rib eye roast, it was an 8 pounder so had to go in the oven

MMM...everything sounded great! I don't think I've ever seen a Spanish squash....I'll be on the lookout for one...had a roast beef dinner at lunch...at a restaurant....leftover soup for tonight.
That sounds good, too. My soup is made with kale & leeks...and lots of other veggies.
should have used some leeks in our soup - still have some in the garden from last year.
Roast pork tenderloin, spinach and feta pierogis, sugar snap peas with matchstick carrots, brussel sprouts.

Where did you get spinach & feta pierogies, Deb? Wegmans? I bought some for the 1st time last week....potato & onion, but I put them in the freezer,,,I've never had them.
Those were from Wegmans, their brand frozen, they were pretty good, but I have gotten them from a local Polish restaurant that are outstanding.
Tonight was chicken, mashed potato/gravy, peas and corn. Comfort food.

Definitely need comfort food on rainy days! Tonight, pork chops stuffed with apple-raisin stuffing, green beans, red & yellow pepper salad.
