˝ Chicken, cut up, sauteed in light olive oil, ( w/ garlic, mashed w/mortar & pestle), French gray salt, pepper. Then de-glazed W/ white wine, chicken broth & itatlian seasoned tomato paste, along w/ a couple of bay leaves, chopped celery, chopped onion, Italian tomatoes and capers. Simmered on low heat for 2hrs.
- Plain long white rice
- Marble pound cake w/ vanilla Ice cream & a dash of cinnamon for dessert
- 2 Guinness dark beers to wash it all down

(forgot the baked brie, w/ almonds, but I’ll get to that sometime this week… ) Hee hee! ☺!

We were supposed to burn a huge pile of debris last weekend but it was too windy so tonight will be the big Bonfire! DH invites a few buddies to help with the burn and I feed them
I've got a rack of ribs w/a rub on it that im going to slow cook and chicken marinating since yesterday morning will be cooked on the grill. Not sure what else I'm a fixing but with a bunch of men coming the meat was the most important thing.
Most likely will be some pasta or rice n' beans and a batch of brownies.
And of course we have the ingredients for some S'mores. ^_^

New England boiled dinner with grey corned beef, cabbage, carrots and potatoes. If you have never had grey corned beef corned locally, you have not had corned beef. Happy St, Pat's Day everyone!

It is grey because there are no chemicals in it. Only salt to corn it just like it has been done for centuries. You can corn your own the same way if you wish. Just float a potato or egg to check the brine for correct salt content and submerge the brisket in the water and salt mix and put in fridge for at least two or three weeks. Change brine every week if desired. Very yummy stuff.

I got my corned beef in the crockpot. Does anyone know the trick to it? I've been told hundreds of things. I don't think I've ever had the corned beef come out so it was falling apart which is how I like it. Is it because it is on top of the veggies and not right in the water maybe? Please l.m.k if any one has any secrets. My mom doesn't trust slow cookers because she thinks they'll set the house on fire... my dad is a fireman so maybe she is extra paranoid. So she can't give me any advice. She always made it good right on the stovetop but I don't have time for that because I am working between 1:30 and 4:30pm so I don't think that's enough time for stovetop.

A friend told me pressure cooking it is the way to go. I put it in the pot and boiled it to death last week and it was stringy. I swear I will never cook it again unless - maybe try the pressure cooker.

Had our corned beef yesterday, you could cut it with a fork, here's how I do it:
Many corned beef cuts come with a spice packet or you can use a little McCormick pickling spice. Don't drain the juice that came in the package it adds to the flavor.Just put the meat in what ever your roasting in, fat side up add spice and a couple of inches of water and roast covered at 350*F for 50 mins. per #. Add your cabbage and potatoes if you like, about 1/2 hour before your done time. I also uncover mine for about 15 mins. at 375*F to lightly brown everything. Carrots are optional, the main reason I add them is that not everyone likes cabbage. Slice across the grain of the meat and Bon Appetit!
I think I'll grill a London broil for dinner to have with the feta,olive,and sun dried tomato pasta salad i made yesterday. Ric

Corned beef---not grey---potato salad, & coleslaw. We had the NE boiled dinner on Sun. with DH's family, but I had already bought the corned beef---anyway, we'll get leftovers.

Meredith how did it turn out? Corned beef is supposed to be red in color.

Greek restaurant - we have to travel 25 miles. I would almost kill for a gryo where the lamb is sliced right off the spit. Is it called a spit? The turning thing.
