I use a 1/2 stick or more of real butter with some olive oil, scallion,gloves of garlic, spices of your choice....basil, thyme, parsley. Lots of people use wine in their sauce, i don't for obvious reasons. Really, it can be anything....tonight I threw in carrotts cut up small for an extra dose of vitamins. ^_^

Scalloped potato casserole with sweet corn and ham. I also made ham and bean soup with shredded carrots, and put some sliced ham away for sandwiches. The smoked skin and fat will go into the suet feeder. I got every thing but the squeal outta' that one. LOL Ric

Made Hawaiian Chicken that Roses R Red (Teri) made at her seed swap

Hawaiian Chicken

Boneless chicken breast
sliced baby Bello (crimini) mushrooms
onions
DRY white wine
crushed pineapple
fresh ground black pepper
salt



boneless chicken breasts cut into LARGE cubes
dip in egg then flavored bread crumbs then fry till lightly browned( I fried in olive oil then added 1 stick butter with mushrooms). Take chicken out and then saute the mushrooms and onions till softened. Add salt last to mushrooms(won't brown) Add salt and pepper to taste, splash or so of the wine, mix in pineapple
Put in baking pan bake 325 for about 30 mins

SAUTE IN MOSTLY BUTTER: LOTS OF BUTTER BECAUSE IT BECOMES PART OF THE SAUCE (PROBABLY BETTER IF YOU SAUTEE IN LIGHT OIL FIRST AND THEN MELT BUTTER IN AT THE END.:

If you make ahead, don't pour the sauce over until you are ready to bake it in the oven.

He's been cooking for me ever since we met 17 years ago. I cooked for the 17 years before that. He's soooo much better a cook than I and he actually likes to cook.
This is from the Williams-Sonoma's Slow Cooker cookbook. Cut up a whole chicken (we had it in 10 parts), wash them and dry them off, sprinkle with salt and pepper, then saute them till golden brown on both sides in 3T of olive oil. Put chicken in the slow cooker with all but 1 T of the olive oil. Saute 8 cloves of coarsely chopped garlic in the frying pan with the last T of oil until fragrant just a minute. Then you pour in 3/4c lime juice and 3/4 cup orange juice into the frying pan and turn up the heat, bringing to a boil. Deglaze the pan, scraping the good stuff off the bottom. Pour that over the chicken in the slow cooker. Put in a bay leaf and sprinkle it with a tsp. of salt. Thinly slice 1 large or 2 small onions and cover the chicken and sauce with the onion. You cook on low for 5 hours or on high for 2 .5 hours. Serve with fresh lime wedges. Very citrusy. We ate it over rice.
