Here's a good one from Spanky's Bar and Grill in Brunswick GA. I have fixed this and Larry brags on it.
takes two pans to start it.
First the sauce:
In a 2 qt sauce pan, over low heat, melt 1/4 cup of butter then add:
13/4 cups catsup
1/4 cup French's yellow mustard
1/4 cup white vinegar
Blend until smooth,
then add:
1/2 Tbs chopped garlic
1 tsp coarse ground black pepper
1/2 tsp crushed red pepper
1/2 oz. liquid smoke
1 oz. Worcestershire sauce
1 oz Crustal hot sauce or 1/2 oz of Tabasco
1/2 Tbs fresh lemon juice
Blend until smooth,
then add:
1/4 cup dark brown sugar
Stir constantly increase heat to simmer (DO NOT BOIL) for about 10 minutes.
Makes approx 31/2 cups of sauce (set aside, to be added later)
Then the Stew:
in a 2 gallon pot, over low hear melt 1/4 of butter then add:
3 cups small diced potatoes
1 cup small diced onion
2 141/2 oz cans of chicken broth
1 lb baked chicken
8-10 oz smoked pork ( I use a boston butt)
Bring to a rolling boil. stirring until potatoes are near done, then add:
1 81/2 oz can early peas
2 141/2 oz cans stewed tomatoes
The prepared sauce
1 16oz can of baby lima beans
1/4 cup liquid smoke
1 141/2 oz can creamed corn
slow simmer for 2 hours.
Yields 1 gallon.

I learned about grilled Brussel sprouts when I was visiting my family in Canada. They lightly sprinkle them with a Greek seasoning, cut an "X" in the bottom of the core and grill--yummy. Oh yes spray with olive oil or brush either one.
Deborah that does sound like an outstanding Brunswick Stew recipe. I love it but alas Kim doesn't so I don't cook it any more.

Actually, Jaye... I remember my mom salt brined a lot of things before cooking... like she said salt brine takes the wild taste out of wild meats... and she also salt brined the veggies for this wonderful salad she used to make ... raw yellow squash, zucchini, cukes, onions, bell peppers, and green beans... let them sit in the brine all day in the fridge... then drain the brine off, and add cherry tomato halves and italian dressing. Would last for days in the fridge, and we all loved it so much on our dinner table.
We did something yesterday that I never could get Don to do before. HEB (a grocery store in Corsicanna) had briskets on sale for 99 cents per pound... LIMIT 1 per customer. So, I got Don to go in with me and each of us bought 1. Took them to the car, and went back in to buy 1 more each. He's always too embarrassed to do things like that. But when I told him that he would be paying less than 1/3 of the price... he agreed to play the game. I may drive there again today to get some more... before they run out.
Deborah... that stew recipe sounds wonderful... I've saved it in my recipe folder to try this winter. Thanks.

Yes to going back to the store for more briskets BJ!! They used to sell them at that price, now they are at least $5 a pound here!! We love to smoke them, or either just roast them in the oven.
For cooking in the oven, we'd butterfly them first, stuffed with hot Cajun chow-chow. Truss them, and then dry rub them before putting them in turkey bags.
Will have to try brining veges your mum's way. Anything to increase the flavor.

You are all making me so hungry. That receipe for Brunswick stew sounds like it would make enough for an army. I have really problems cooking anymore. Cooking for one, especially after I come home from work is just not something I want to do. Even eating out, by myself, is just not fun. I am thinking that being at a retire place where they fix your meals wouldn't be all bad, many of them are having their own chefs to keep the food from being instituional.
Morning everyone...rushing around today trying to get everything done that I need to do plus the errands Laura needs to get done since she is minding the zoo here for us and they are going to BBQ here tomorrow night so mom will have company (and MIL if they can get her to come over for dinner). The cat and the bird are fine but Porter doesn't like fireworks and needs someone to "hold her paw".....she doesn't mind firecrackers and the small stuff but when the M80's and other big stuff start up when isn't a happy camper, and the City of Tumwater sets off their big display about a mile from the house....
BJ we had a little Asian Pickle Jar that you sliced in your choice of veggies and covered with a salt/sugar brine, let sit for a few days then as you would eat them you just added new to the jar. I have misplaced that recipe and would love to find it again because it sure was good. Every year just before St. Patricks Day our local store has a big sale like that on Corned Beef Brisket....Laura and I always make several trips and stock up on all we can afford.

Janice I so agree. With Kim gone this week I have had to force myself to cook but at least I am doing it. Be so easy just to eat "flakes" as my in laws used to say. I fix a chicken the other day and tonight part of it goes into rice with onions and celery. Mustn't forget the garlic--can't live without garlic.
Well Kim has sent me a shopping request for some gifts for her Tica Mom and I want to get that out of the way while I am thinking straight. So I am off to the big city for a few...back later. BTW, she adores the family she is staying with and is using her ESOL training by helping one of the sons with his English.

My mother always had a jar in the frige with vinegar, sugar and salt & pepper that she sliced cucumbers in during the summer. She would serve the cucumbers and them add more new to the jar. Does anyone have a recipe for that combination? Did it have oil in it, and how much sugar is too much? Another one of those things Mom just thru together and I never bother to ask her how. Boy, would I give a lot to have just an hour with Mom to ask all the questions I should have asked when she was alive!

So far we are having a quiet weekend.. Son in Jacksonvill NC wants us to come there and stay with him and his family and then tomorrow go and watch the fire works with them at the Marine Base... Oh well we will see.
Ok now talking with hubby about going to sons house... I will have to get it over with sooner or later...LOL

Susan... for the grilled egg plant.. I do the same as I do with zukes... I put some olive oil, salt and pepper, and some Italian seasoning in a gallon zip lock bag... knead it till it's mixed up... then drop the veggies in it. I suck out all the air I can get out, and let it sit in the fridge all day (or over night)... till time to grill it.
I slice the egg plant into about 1/2" slices... and just cut the zukes in half long ways.
BJ, than you so much as growing up my Mom never cooked this type of stuff and now living in the south I grow it and just don't know always how to cook it different....

Ok said no plans for the fourth but son in Marines just called and wanted us to come down so hubby wants to go so we are leaving in a few to go there... Susan you can also take the eggplant after it is grilled, scoop the middle out of the shell and mix with a good quality yogurt, season with garlic, salt and pepper , mix really well and it makes a delicious dip for pita bread or crackers.

Just got off the train, a two hour ride...now we have an hour or two in the car to get out to Cannon Beach.
