Here's a scrumptuous, very moist cake recipe from another neighbor down here:
Fair warning: it's quite rich; 420 calories per piece, but don't let that stop anyone!!! LOL

1 pkg. (18.5 oz) yellow cake mix
1 can (20 oz.) crushed pineapple in own juice
¾ cup sugar
2 pkgs (3.5 oz each) instant vanilla pudding mix
3 cups milk
1 cup heavy or whipping cream
¼ cup confectioners sugar
1 teaspoon vanilla extract
¾ cup flaked coconut, toasted

In 13 x 9 inch pan, bake cake according to directions on pkg.

Meanwhile, in medium saucepan combine pineapple with its juice and sugar; cook over medium heat, stirring occasionally until thick and syrupy, about 20 minutes. When cake is done, remove from oven and pierce top with a fork at 1-inch intervals. Pour on pineapple mixture and spread evenly over cake. Cool completely.

In medium bowl combine pudding mix with milk; blend until thick. Spread over cake. In medium bowl beat cream until soft peaks form. Add confectioners’ sugar and vanilla; continue beating until stiff. Spread over cake. Refrigerate for 24 hours. Before serving, sprinkle with toasted coconut. Makes 16 servings, 420 calories each.

You wouldn't eat Shepherd's Pie if you had cafeteria duty like I did! Of course, they don't serve anything except pizza, grillled cheese, & nuggets here now---probably not too nutritious, but the kids just threw everything in the garbage if they didn't know what it was. Leftover pizza for us tonight---just like the cafe!

Whoa! I like the whipped cream & pineapple parts! Saw Emeril on Planet Green last night & he made grilled pineapple with agave syrup---the syrup is supposed to be OK for diabetics---I'll see if I can find it for Mom.

Nice appetizer!

Last night I made a new favorite. Happened to just try it out recently when I found I did not have too many options.

1 lb - Ground Turkey
1 Green Pepper
Garlic
Onion
Cumin
Wine
S&P
2 8 oz cans of Goya (seasoned) tomato sauce (1 1/2 cans would be perfect)

Brown the turkey. (I dump the fat after it cooks a bit)
Add one onion and a few (or more) cloves of garlic
Add the sliced pepper
Season with S&P and cumin (about a tsp or so)
Cook for a few minutes until the pepper is tender
Add 1/2 cup of wine
After a couple of minutes, add the tomato sauce
Cook until bubbling.
Lower and let simmer for a while.

Yeah, Jen........that cake is not something for the weak-knee'd! dieter!! I would cut the cake in smaller pieces than the recipe calls for! It is for special occasions only!! Have an ambulance readily available. LOL (And by the way, have you seen the number of calories in a normal piece of pie????) Unbelievable!!!

I never can enough tomato sauce. :( I found a single quart left and it is only March. I have to be ruthless and pull out volunteer tomato plants this year and grow sauce tomatoes in their place. Or - get rid of that pesky lawn and grow tomatos there!

When I was expecting the last child (#5) I craved every single day for approx. 5 months this meal:

Potatoes - Baked or Mashed
Corn on the cob and /or garden/chef salad
Steak-BBQ or Broiled OR Haddock

Often times i'd eat a Steak N' Cheese Deluxe Sub around 11am....had one tonight , thats what made me think of all this! lol

BTW...DH would not eat Corn on the Cob for 2 years after that. ^_^

there is a restaurant in my town that is expensive but fantastic... we only go there every few months.. but they have two dinning rooms and they are divided by fish tanks... very ornate place... but the food is out of this world.. I would give you the website... but it's not working at the moment
