First day in who knows how long that we have modest melting in full sun hours. We are still below freezing but the angle of the sun is toasty warm when it appears.
Also noticing the increasing daylight!

PREP TIME 15 Min
COOK TIME 1 Hr
READY IN 1 Hr 15 Min
INGREDIENTS (Nutrition)
1 (48 fluid ounce) can chicken broth
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 onions, chopped
2 cups chopped carrot
2 stalks celery, chopped
1 pound ground veal
1 cup dry bread crumbs italian style
1 egg
one cup any pasta you like
salt and pepper to taste
DIRECTIONS
In a large pot over medium heat, combine the chicken broth, spinach, onions, carrots and celery. Mix well and allow to simmer.
In a separate large bowl, combine the ground veal, bread crumbs and egg and mix well. form mixture into 1/2 inch diameter meatballs and carefully drop them into the soup.
. Allow the soup to simmer for 1 hour. Add the pasta 30 minutes before serving and season with salt and pepper to taste.
this is what I make
No thanks on the veal and I hate any veggie frozen except peas and corn.
you can use fresh and lean ground beef
If using chicken broth... i'd just a soon use chicken to go with it. Easier to digest also. I'm really picky about veggies...fresh mostly, canned ones are OK, but frozen string beans taste like rubber, spinach and brocc are mush, ect... YUK!!!
