Lunch at the Duck was great...had aroncini (rice & cheese balls deep-fried) on a bed of butternut squash puree, & a salad with 1/4 head of iceberg, sauteed cherry tomatoes, pickled red onions, egg & bacon with a blue cheese dressing....

DW made ham and sweet potatoes yesterday. Apricot crumble for dessert.

3rd x-mas party this week.
My turn, so it was back to Easy Chinese Recipes. Made Cashew Chicken. NOTE: Don't leave cashews under broiler too long like I did! Luckily there were enough left for a second try.
Yes, nuts burn quickly because of their oil content.....I had a large group here today, made corned beef & cabbage.....ice cream cake with candy canes for dessert....

Made gluten free peanut butter cookies they came out really good
2 eggs
1/2 sugar
1 cup brown sugar
1 tsp vanilla
2 cups peanut butter
Mix pb, vanilla and sugars together add in eggs beat till combined
roll into balls and press down lightly with sugar covered fork
350° 8 mins
I'd like those, Jen...sound yummy! Jan, I buy pork sirloin, cut into chunks, brown in olive oil......add 1 chopped onion, 2 large cloves of garlic, diced chili pepper, bay leaf, tsp. of caraway seeds salt & pepper.....cook until just softened....put in stew pot, add 1/2 can diced tomatoes, 1/2 cup white wine...optional... a box of chicken stock, a cup of water.....cook an hour, add 1 large sweet potato diced, 1 stalk celery, and 2 cups shredded cabbage.....cook until veggies are tender, about a half hour.....my stew pot goes into the oven, I bake at 375.

I made filet mignon cooked over sliced garlic n butter potatoes with bacon wrapped green beans. We had a great night.
I also made sky jello but forgot to serve it.
