Any bread makers?
Do you let the yeast rise once then shape into loaves and rise again, or rise twice, then shape into loaves for a third rise?
I've seen it both ways, and maybe that's why I've had trouble from only rising once before shaping into loaves.

my bread machine lets it rise twice .. I think... never did it by hand other than pizza and I did it the same as you described .. rise twice and the third time after shaping

The lunch was terrific....tofu tempura with filet beans, shitake mushrooms, leeks, & what I thought was salmon....I called the waitress over & asked why salmon was not listed on the menu as an ingredient....she laughed, said it was ginger....have never seen pink ginger, but it tasted like ginger! Everything was in a peanut lime sauce, & just delicious....then I had a dessert called banoffee pie....now I can only have an orange for dinner!
