I cut the chicken breasts thin.. sometimes pound em.. but wasn't in the mood to.. LOL

in the flower I put salt & pepper, cayenne pepper, and smoked paprika .. egg wash.. use either panko or reg breadcrumbs... season em up with salt, pepper, thyme and parm cheese.. always let them rest after breading and before cooking them.. to make sure everything sticks.. fry them in shallow olive oil and good to go

Last night: Steamed fresh brussel sprouts, pasta, green stuffed peppers from the garden.
Tonight: Rice pilaf, broccoli, french bread and a whole chicken, cut in half then marinated in 2 different flavors.....slow cooked on the grill.

I had dinner at Davids and he made pasta with Italian sausage in olive oil n garlic with tomatoes, peppers, zucchini, onions, fresh basil, spinach, shredded cheese and multiple seasonings. It was very good, he's a better cook than I.

Thanks, Allison...that's usually the way I make mine...sometimes add lemon & white wine to the cutlets.....Those meals all sound yummy, & I loved the beach cake....my granddaughters would have, too! Lunching at a friend's today....former Home Ec teacher, she's a great cook....

I haven't had pork chops in ages! Today I made Swedish meatballs with cucumber dill sauce, whole wheat noodles, & green beans with tomatoes for Mom's lunch....I'll be leaving in a few minutes to deliver it...also, my sister & I are interviewing a home helper for Mom....keep your fingers crossed that it works out....

My daughter is supposed to pick where she wants to go for dinner for her birthday

She picked pizza for lunch and I had eggplant rollatini, the sauce tasted EXACTLY like my mom's cacciatore sauce....YUM!!!

Oh, good choice...hope she had a fun birthday! Good news with my Mom also....we hired the woman we interviewed...she'll be with Mom 4 hours a day.....

Just picked a peck of peppers, so DW dug out the "Italian Sausages and Peppers a la Fabio" recipe again with baked potato and cucumber salad.

Spent the afternoon chopping and sautéing veggies and Italian sausage to make a onedish meal. Included cannelloni beans and corn and some diced tomatoes. Will be served over rice.

Also, while I was at it made chicken and vegetable soup. Should be able to freeze most of these. I find I like the process.

My DIL yesterday on Facebook asked if anyone else realized that no matter how long it takes to fix a meal it is eaten just as fast as one that is a quickie. Raising four boys I just had to laugh at that one and said I realized that a l o n g time ago.
