Jan, loved your hot potato salad that you brought to last weeks swap. What kind of potatoes do you use and how do you get them so perfectly done? Inquiring minds want to know.
Don, I love Indian food. Once had opportunity to travel from Bombay (then) to New Delhi and then to Nepal. villages and cities. In Katmandu I went to the market place determined to buy authentic spices to bring back with me. I managed to identify and indicate to seller which ones and how much of each but when I handed over my money , each vendor refused to sell to me and handed my money back and waved me away.
Dejectedly I began to return to my group meeting place when it dawned on me that the sales could not be completed because I had not brought with me something in which to put the spices I wanted! Made short work of a map and any other paper I could make packets out of for each spice I wanted for my own garram masala. Glad I sailed thru Customs!

Glad you like it, Judy. I think I used red skinned potatoes for it or maybe new potatoes. Not russet or ones for baking. I also think I left the skins on as much as I could to help hold it together. I just boiled them. I actually thought I overdid them a bit. Boil to your taste. Then comes the magic bacon. Everything is good with bacon heehee. I fried up some onion first, set it aside and fried up sone bacon, then mixed together when crisp to your liking. I also don't measure, so this time I found a recipe on Southernfood.com. I KINDA followed it, but not quite. I used sweet pickle relish, mustard, sugar, apple cider vinegar, some water. Because I used a whole bag of potatoes I used a whole pound of bacon and adjusted everything else to what I thought looked good. I transported the dressing separate from the potatoes and heated it up in the microwave at Holy's house then mixed it al together. Jeff likes it!!

Oh, wow...everyone's food sounds delish.....just grilling hot dogs, and making potato salad, baked beans, & asparagus with raspberry vinegarette for tomorrow.....

this hotel is nice... the free breakfast room is cute.. cereal, bagels, juice, coffee, can make your own waffles, eggs, and sausage too.. lots of goodies there

Bought chicken and avocado the other day, forgot it for a couple days. Didn't really have anything to go with it, but cooked rice, threw in some salsa, shredded Swiss cheese, cilantro and garlic chives, the chicken, and made guacamole with pita chips. Was pretty good for not having my usual stand by ingredients.
It does sound good.....funny what you can create when you have to!
