I had always had mine fried by others back in La. LK.
Peanut oil is used and supposedly if it floats it's cooked.
But I've watched BIL letting it cook a little longer without burning, must be the temps too.
One year, it took a coat hanger to remove a turkey from the deep fryer!!
You might also need to get the Cajun injector to marinate your turkey with.

Wait.. better yet, give Sis Kathy a call. Mike fries all their turkeys (not sis).

Cajun injector!!!! YUM Hubs has fried a few turkeys!! they are delicious :) just be very careful putting in and taking out!!! that oil gets HOT!!! scares me !!! I won't go near those friers!!! I have this crazy fear of hot stuff like that, can't roast a marshmallow over a fire, can't cook on a camp stove...odd thing ??? but I love to sit at a fire, and it never bothered me to load the wood stove??? weird, the things our minds do to us!!!!

My sailor boy will be home for thanksgiving !!! have not heard yet on Christmas. The soldier moved a few days ago, and he is getting closer and closer!!!!

I think I will go grab one of those energy bars, and do a little bit of stitching before I have to go to work...

Sue - yikes on the fried turkeys - I hear more Canadians have burns trying to do them, but I see the fryers in the store.
I saw a YouTube instruction on how to do it - thing is, they forgot to say to wipe the turkey dry before you put it in the fryer (they do say to wash it first, but don't even show the drying of it, either - siiiiiiiiiiiigh )
I'd be terribly afraid to do one.... Peanut oil heats hot and you really need it hot!!

Jaye - a coat hanger? That sounds dangerous. They have "proper" utensils for it, I've seen them sold.

Hello Ladies,

I will be going up to my daughter's early Monday morning and will stay until early Friday morning. Going to be babysitting Taylor and Hailey, going to keep them busy painting patio pavers to look like snowmen, santas and reindeer. Plus going to do some more hummer feeders got more clay different colors. Michaels has a sale on clay 4 for $5

Went and got my hair cut and went straight I am tired of curly hair. Now I can just wash and go feels soooooooooo
good. Doug really likes it a lot. Now his fingers don't get tangled in the mess of curls lol ^_^

Took Amy Rose for her first set of puppy shots!!! What a ham!! the vet just kept laughing at her. She is about 13 weeks and weighs 21 pounds.. Say "Chow Hound" lol yup she loves to eat everything and anything. The vet said that she will learn alot from Harlee.....she already has. She knows that when we go for a ride, they ride in the back of my 4runner so she sits at the back and waits for me to open the door. Harlee can jump in but Amy is still too little to reach. Then when we take off she has to sit on the console between the seats to watch where we go. After awhile she goes to the back and lays down. She will be a good dog. I just hope that as she gets bigger and older that her and Harlee don't get into a fight. After all she is a pitt bull ugh!!!!

Susan, I knew about the coat hanger as I had seen my ex BIL struggling to remove a turkey, even with a proper fryer. Serious!!!
Kel's cousin fried a turkey 2 years ago, bought all the right implements and couldn't remove the turkey. I advised him to rig up a coat hanger to remove it. Cousin laughed at me, but at the end, he did have to use a coat hanger.
There are many advice as the right way to do it. It's all a matter of learning from experience, that's why I suggested Mike and Sis Kathy.
And since Thunder's hubby fried a few.. there another expert our dear LK can learn from.

I was lucky that I didn't have to fry any when in Louisiana. Almost all diners and local grocery stores there sell them. At $30 a turkey, then, it's worth it. Some years, ex' BIL would do the frying. (I let him have his once a year glory moment ;)

I rather deep deep fry some quails then do a turkey!!

So Susan, I hope you'd grab yourself a pumpkin pie and celebrate Thanksgiving with us ^_^

Well, I looked at the electric fryer, and ended up getting the gas fryer. The electric one had no thermostat, so I did not think it would get hot enough? Gas fryer and a propane tank was $48.00 each, and the big jug of peanut oil was $30.00! We have an injector, what do you inject the turkey with please?

Sounds like Amy is the queen of the house. If she's part pitt bull, just be careful not to let her come close to other pitt bulls.
They are prone to return to their natural traits which you know can be fatal to other breeds. I simply don't understand this.

Had a neighbour who raised a pittbull from young. She was a house dog. Neighbour always keep an eye on her when she had to go potty.
One fateful day, the dog was left unattended for just a few minutes. There was another stray pittbull that came into the yard. At the same time, another mutt showed up. That pittbull grabbed the mutt's head and the neighbour's dog bit the end.
Poor neighbour couldn't stop the carnage and had to euthanize her dog.

Kel's cousin was charged with animal negligence. His wife loves pittbulls. They had a pair and they're house dogs as well. One day those dogs got loose from her and ran straight to a neigbour's house where their kids were playing.
Thank God, their father was there and when he saw them coming, he managed to club them.
Cousin's wife kept telling the cops on how gentle her pittbulls were...

if you fry a turkey, don't get a frozen turkey ! get a fresh one. and also make sure it is BONE DRY ,YES, BONE DRY. !
also STURDY AND LEVEL area for the cooking area.

A friend of mine was walking home one summer evening and it was dark. A German Shephard and another large dog had gotten out of their yard and were roaming the streets loose. They were stalking her. Someone else was driving by, saw this, amd called the police. The police came in time and the dogs were restrained. The owner was charged with allowing them to roam free. My neighbour was terrified for quite awhile.

Oh Susan that is scary. Glad they got the dogs in time.
If only we could illegalize the bad people that own the dogs instead of the dogs ?

LILLY MAE'S "GREENS" RECIPE
(Lilly Mae Boutte was my mother. She was a GREAT seamstress, and the original Martha Stewart! Cooking was not her forte, but she put her foot in this Greens recipe! I want you to share this recipe with any and everyone you want to, but I have only one request -- that in honor of my mother, you always remember to call this dish "Lilly Mae's Greens" and that you pass the name on when you share the recipe. Spread the word. Thanks!)

The details below are long but, once you get the hang of it, this recipe is super simple. Layer everything together together in 20 minutes and then go to bed...

1 or 2 bags each of chopped, frozen greens, depending on how much you want and how big your Crock Pot is. I use VIP brand or whatever's available. Keep your ratio even - 1 of each, 2 of each, etc. (2 bags of each serves approximately 10-15 people as a main dish -- 20-25 people if used only as a side dish).

Collard Greens, Mustard Greens, Turnip Greens, and Spinach (which usually comes in a bag twice the size of the others - use 1/2 the large bag of spinach to equal the 1:1 ratio)

1 whole large and 1 whole small onion, chopped (2 large for double batch)
2 large bell peppers, chopped (3 large for double batch)
2 cups of water (I usually measure in an 8 ounce yogurt cup) (3 cups for double batch)
1 heaping Tbsp. and 1/3 Tbsp. more Season All Brand seasoning (If using 2+ bags each, adjust the Season All to about 1-1/2 to 2 heaping Tbsps) I use a regular old kitchen tablespoon to measure.
1/2 Tbsp. ground Black pepper (1 whole Tbsp for 2+ bags of each)
Optional -- 3-4 tablespoons Bacon Grease (preferred)
4 Small to Medium Ham Hocks (Salted, fresh or smoked) (or, as many as will fit in the bottom of your crock pot). (You may substitute SMOKED TURKEY NECKS for Hamhocks for a Lower-Fat Option)

If using SMOKED Hocks or SMOKED Turkey: Proceed with recipe.
If using FRESH Hocks: Place hocks in a large pot and cover over with cold water. Add about 2-3 tablespoons raw table salt and boil for 1-1/2 hours. Proceed with recipe.
If using SALTED Ham Hocks: Place hocks in a large pot and cover over with cold water. Boil hocks 1-1/2 hours to leach out some of the salt. Add NO salt to the water. Proceed with recipe.

• Place one layer of hocks/turkey necks on bottom of large (5 quart) slow cooker. Squeeze them down into all the little spaces!
• Layer the frozen greens on top of the meat in this order: collards, mustards, turnips and spinach. Squeeze them in. They may not all fit at first, but you can add the remaining greens as they cook down.
• [Sautéing the chopped onion and bell pepper in the bacon grease until slightly softened (does not need to be browned) is an optional step. I don’t sautee’ a thing and it’s still wonderful! If you do this step, pour the bacon grease in, too.] Otherwise simply layer the chopped, raw bell pepper and then the onion on top of the greens. And, yes, you will have a small mountain!
• Mix the Season All and black pepper in the water and pour evenly over the onions and bell pepper. Do not stir the pot. Gently force the lid down as far as it will go.
• Cook on high, overnight (8-10 hours). If you happen to wake up, go gently fold the onions and bell peppers into the greens, being careful not to tear up your meat. If you don't get up, fine. Fold the peppers and onions in after the cooking time is finished. I usually pull the greens off the meat and reserve the meat in another serving dish so it doesn't get all broken up in the greens.
• If you put the pot on at 8 p.m., it'll be ready when you wake up @ 6:00 a.m. in the morning!

Serve over steamed white rice with corn bread and Louisiana Red Hot Sauce, and sweet potatoes or yams on the side. ENJOY!

NOTE: ADD NO OTHER RAW SALT TO THIS RECIPE!!! (Except to pre-boil unsalted fresh hocks). DO NOT ADD SALT PORK TO THIS RECIPE!!!

When I read further down the recipe and you noted Louisiana Hot Sauce.. I went AHA!!
My own ex' late parents use hamhocks to cook their greens in and sometimes just cabbage, but never in a slow cooker. But they omit bell pepper.
Thanks for the Lilly Mae's Greens recipe sister, I'm already salivating. I'll do this next week when I get some hamhocks at the store. I'm the one that can dine on just vegs!! And yes to serve this with a side of hot corn bread, the savory kind, not the sweet.

By the way, I love to saute my curry paste in clarified butter. One can't burn ghee with all the solids removed, and it makes the curry richer!

HAWAIIAN PORK

Ingredients
Batter - 2 eggs
¼ cup flour
Salt & pepper to taste
Batter mix for meat may be doubled if necessary.

2 chicken bouillon cubes
1 cup boiling water
½ to ¾ of 1 medium can pineapple tidbits (save juice)
4 stalks of celery, sliced
2 green peppers, diced
1 small onion, if desired
2 pkgs of pork steak or 1 pkg meaty pork chops
3 tbsp cornstarch
3 tbsp soya sauce
½ cup brown sugar
½ cup vinegar

Use medium heat

Cut meat into cubes or chunks of ½ to 1 inch in size. Mix with batter and spoon one at a time into a frying pan containing ¼ cup of cooking oil. Cook until golden brown (drain oil). Lower heat to simmer, add onion, green pepper & celery. To this add ¼ cup bouillon. Mix ½ cup pineapple juice. Cover & simmer until vegetables soften.

Sauce
In a saucepot, combine 3 Tbsp cornstarch, 3 Tbsp Soya sauce, ½ cup brown sugar,
½ cup vinegar & the rest of the bouillon and pineapple juice. Stir constantly on medium heat until it thickens. Add pineapple to pan while sauce is thickening. When sauce is done, stir mixture into the pan. Simmer for another 15 minutes. Serve over steamed rice.

Susan, thank you! I can smell it already. Question, can you remove the firtters from the pan, do the veges and the sauce, then add the fritters last to the mixture? Kel's the kind to love anything deep fried to be swimming in sauce, but I prefer my fried stuff retain some crunchiness.
Hmmm.. maybe, I'd do half and half.

Thanks Susan! I've done a similar recipe but with catfish. No brown sugar though, just regular sugar and added some halved cherry tomatoes. Same ratio of vinegar to sugar.

I'm back!!! Didn't have to cook at all. Kel settled for cheap, but home made tacos at a Mexican restaurant. You can't beat big hefty ones for $1.50 each. He also had some small empanadas with a hot sauce.
Wish they offer fish tacos. LK, you must have a slew of TexMex restaurants to choose from. We only have 2. Used to be 3.
How I envy Marion for she can get Cuban food easily.

Wal*Mart was packed!! I was looking for a brisket for Thanksgiving. There were only 2 left and the price from $2.78 a pound went for a dollar more.
Didn't get any, as you all know half of that brisket will be pure fat. So, we will be having corned beef for Thanksgiving :D Still brisket, though!

Jaye, we have so many Tex/Mex places here. But half of them are no good. For some reason when we order taco's, it is just plain cooked hamburger, with no seasoning at all. Some taste like they boil the meat!!! YUCK!!!

LK, food cost is just atrocious, especially in poor counties like mine. Sometimes I'd do my shopping across the border.
When I left Louisiana, brisket was selling for 99 cents a pound there. When I got here, they're at $1.99.
The beef and pork costs are equally high. There's a big pork processing plant in a nearby town, and I just can't understand why local pork chops can be as high as $5 a pound, whereas those brought in from other states, can be so cheap.

Could be we have the most welfare recipients? Got to be. When we go to Charlotte or the Raleigh/Durham markets.... I am amazed at the selection and the prices.

Living in Arizona i sure miss the mexican food ! oh what i would give for a real taco !
i can make my own but my family won't eat them.

Okay sisters.. anyone ever cook venison? My church sister will be giving her all her venison roasts as her DH won't eat them. He hunts, but won't touch deer meat. So, my gain.
Only way I know how to do it is marinate with red wine overnight, add aromatics, lots of garlic and slow cook on the stove.

Jaye, we cook them like any other roast. You can also slice some of it, and it makes a wonderful Swiss steak. Cut small pieces, roll them in seasoned flour, fry them in a skillet, then place in a baking dish with a can of mushrooms and a sliced onion, make a gravy out of the skillet drippings, pour over meat and onions and bake about an hour. served it with noodles or mashed potato's.

Carolyn fix them only one way, that is cubed, wrapped in bacon and then fried.

Wow, venison chilli. Never heard of that one. Well, I've never heard of Venison Swiss steak until LK suggested it.
All the probabilities of cooking venison. As far as I know, as long as brother Earl bags a deer, sis Carolyn will be giving me some meat. I'm so blessed! Venison is not sold in grocery stores and Kel doesn't hunt. Lord sure surprises me after I had told Kel that I had a craving for venison!

LK, any plans for today? Baking? Sewing?

i have tons of deer in my woods but the my family don't eat it ? grrrrr. just crazy not to eat venision when its right at your back door ?
raining like crazy her and a giant squirrel is on my porch ? man that thing is huge ? where is my dog when you need her ? sleeping i guess ?
i have to wait until tomorrow to do my stuff. until the bank can get my my print out uhg.

How far are you from town, Sue.
Us is about a 15 minute drive to the bank, add another 15 to the closest WM and about an hour to a big town like Myrtle Beach.
Gas is a luxury item nowadays :(

Just had some carnitas over rice. Normally, I'd bake a pork roast in the oven, cut them up and brown on the stove. But today, I boil the roast in stock (chicken and onion) for 3 hours. Let it cool, cut them up and then brown them. Turns out more flavorful.

They're easy LK. Get you one of those fatty roasts. You can use Julio's seasoning, I use Adobe brand. For stock, just empty a packet of Lipton Onion soup mix.. and add a couple of chicken bouillon.
I didn't waste the liquids, cooked rice in it.

On a serious note, did you hear anything from the hotel where you broke that finger? That's some serious damage.
