I turned the leftover pasta and meatballs with sauce into a fritata (Italian omelet) for lunch today. Delicioso part two.

Made a pot roast yesterday in one of those cast iron pots, cooked it in wine and chicken broth. We'll finish it off today with some white rice. It's got onions, chunks of tomato, celery etc., so veggies are already included..
Made an excellent dinner, sirloin roast, mashed potatoes and gravy, brocolli, cauliflower and carrots

Still trying to figure out what I want tonight
I just put our dinner into the oven. It is boneless, skinless chicken breasts and a medley of sliced red potatoes, sliced onions and sliced garlic with olive oil and melted butter stirred in. I guess that would be like oven-baked home fries.

agree, bring on da buddar, more betta. But why take off the skin? I like to cook with it on for flavor and then don't eat it, or try no to. Ha. Sounds great. Soup night for me as DH is playing hockey and won't want dinner. Patti
We are moving to a new office for work, so had a goodbye lunch today, mostly for a volunteer who won't be coming with us. She's volunteered for us for the last 15 years, and will miss the work, but doesn't want to travel the extra distance.
I made a cake, and 5 people brought in different soups. I tried 4 of the 5. We had chili, chicken noodle, roasted vegetable, lentil, and vegetable beef. All excellent! And some great multi grain bread. Mmmm.
You all are welcome anytime, just let me know ahead of time. Whenever any of you travel all the way down the NJ turnpike before crossing the bridge into DE. stop in to see me. I'd love to see you.

That's the way I used to drive to FL! Was very happy to get into Delaware! I had a charcoal broiled chopped steak with onions, mashed taters, & coleslaw.....have the rest in the fridge for tomorrow!
what a smorgasbord I had tonight pierogis, leftover pork chops, corn, spinach and broccoli mini quiches.
my son had fish sticks and corn and my daughter had peirogis and corn and hubby just had peirogis
