Tonight ... garlic shrimp and fresh vegetables. If I keep eating out ....I will be rolling everywhere I go.

NEW resolution ..... cook more.... but the oven is blown up and I hope to get it all fixed right after Thanksgiving. I can use my range but I sure miss the stove. Allows me to cook in bulk and then have leftovers during the week. Easier when I get home from work.

Some things lend to cooking ahead for Thanksgiving and good thing about that.

One item that can be made ahead is whipped sweet potatoes or yams. I add 1/2 a banana and the kids and adults love it. Spread it out in a glass casserole -- a little honey and butter on the top (or brown sugar) and let it brown a little at the top in the oven as you are making the gravy.

Another thing that whips up well (like you whip potatoes) and can be made ahead of time are brussel sprouts. My kids won't eat whole. A little salt and pepper, some butter, a little celery seed and dill (and if I am in the mood to fry up some bacon ... crush and add the bits to the whipped sprouts).

Stuffed mushrooms I can't reheat (stuffing gets a tad rubbery) but stuffing can be made ahead.

Can cook up the whole cranberries ahead (not that hard to do on same day but it takes up stove space and it is in the way at least for me) ... I cook it up ahead and when ready to serve add a wee bit of fresh lemon and orange on 'D' (or should I say "T") day. Everyone likes this cold but I always heat up a cup because I like it hot.

The pasta dish (usually baked ziti) gets done ahead. Tomato Gravy takes me hours to cook and clean up. If I get energetic I will make egg plant parm instead of the ziti. I only make a few of the guests mad about that.

The acorn squash get done ahead (or at least prepped for roasting)

The big boy (turkey) I just haven't figured a way to do ahead (grin) but I would if I could. That is one crazy kitchen and hot too. And the kids let the little ones have access to the kitchen and those little hands and feet and bodies can get underfoot real easy. Glad that oven is deceased this year!! HA! Italian holidays involve a lot of yelling and swearing and hugging and squeezing and teasing. I'm getting too old for that.

Wed. night I made ribs and Spicey Oriental Chicken Wings and I made them a little warm.
Last night we had chilli, corn bread and rice pudding for dessert.

Usually when I read this thread I feel incredibly guilty because I seldom have time to cook a proper meal these days (between work and school I can barely find time to sleep)! My poor husband - he usually makes himself an omelet, french toast, or I cook up some spaghetti with bottled sauce. He's such a saint - never complains even though I used to cook all the time. But tonight I'm happy to report that he ate like a king for the first time in over a year! I made a roast, home-made mashed potatoes and gravy, fresh bread and frozen mixed vegetables (at least give me credit for the first three :) It was delish.

That's why I really love my crock pot, just throw it in in the morn or the night before and you have a great meal with hardly any work.
