You can add water, saute' until just start to soften or nuke 'em before you put them in the oven.

DH is cooking tonight again, but he promises it will be early. He wants me to make the salad again. No sweat. He says he really wants to be in bed by 10pm. We'll see...

Yes, Deb. When I male the Spanish rice, I do it with pink beans, pigeon peas or Vienna sausage. Occasionally, black-eyed peas.

Sofonisba, I had the same thing happen to my veggies in the past. Not sure why that happens, maybe it's a glass pan? I think when it happened to me I had used a glass high sided baking dish. The way it worked well this time was on a large metal baking sheet. It was also the reason I decided to drizzle olive oil over the veggies and seasonings too. Basil Garlic Powder, I think I cheated and used Lawry's though. Guys seem to really like that seasoning. I've never met a man that didn't like it. My dh loved the veggies. And to be honest I put the veggies right up against the sides of the chicken, I didn't actually put the chicken on them. I just thought it sounded like a good idea after seeing all those juices that could have been dripping right on top of them. mmm I did have to stir them a coupleof times and they had started to stick. I didn'tput any water but I also put softened butter on the chicken which I'm sure also got on the veggies.

The rice came out really well! I make the black beans separately from the white rice, as opposed to this where all cooks together. The black beans are made with garlic, onions, pepper, water and a bit of red wine vinegar - maybe one tablespoon. Really delicious.

Meredith, I do use a glass pan. Next time I'll be adding water and using a bag. I'll report the results after it's done.
