BTW, DH used to buy fish here in OH in the store. He came home to MA and saw great stuff in the fish market and hasn't bought it here since. He waits till we go visiting MA to get his seafood!
We do get lake perch or walleye here, we get it at the resturants or at a fishmarket in the next town.
Out to dinner, DH had cajun broiled haddock, clam chowder and salad, I had a grilled chicken southwest salad.

Yup. The funny thing is Jen, he starts pretty early. Well, not that early. He starts around 8pm. Tonight he's cooking from a recipe from a cookbook titled "20 minute dinners". It's a delicious chicken dish that he's made many times (a lot better than the frittata). He should have it memorized. It still takes him 3 hours to make. I had already made and set aside the salad for tonight.
One of these days I'm going to sit in the kitchen on a night when he's cooking and write down what he does minute by minute. One thing I know, is that he spends a great deal of time washing the food and chopping what needs it. When I chop, I just chop. I don't care that each slice is super-thin or even. It will be eaten soon. Still, maybe that adds 15 minutes. At least he has a sense of humor about it AND he brings me cheese and crackers so I don't wither away waiting. Lucky I dont get nightmares.

I made a Roasted Chicken on a bed of potatoes and carrots tonight. I also just put the broth away that I made with the chicken bones. All set for chicken soup tomorrow. I prefer chicken and dumplings so I will probably make that. I tried a recipe a long time ago from Tyler Florence's old show - Food 911. It was so good I've never tried it any other way.

I have to agree that Tyler is not bad on the eyes, definitely a major bonus to watching his show! He definitely knows how to cook too. Not just a pretty boy, another bonus! : )
I know how that is, I used to eat late like that when I worked as a Hairstylist. I never got home earlier than 9:30 pm. So it would be pretty late by the time I'd get some food ready, I usually didn't cook anything too complicated, I'd save the more complicated things for my night's off. Lot's of Take out in those days. : )

Allison, on nights like last night, I don't go right to sleep afterward. I stayed up and watched a movie. Went to bed around 2am. I like late dinners, but 8pm is late enough!
Meredith, I must confess, I have botched the last three roast chickens I made. I followed the directions in Joy of Cooking, but they're so convoluted. None of them tell how to do it over potatoes and carrots which I want to do. I cooked the last one for an hour and a half and the potatoes and carrots were rock hard. What am I doing wrong?
