Let's continue our dinner stories.
What for dinner? Pt 3
That looks yummy Jen!!!
Chicken rice soup tonight that was lacking something along with chicken sandwiches that my husband didn't like...just ate a bowl of puffed rice!
Went down to see my oldest bro it was his b-day(65) they usually eat at 5 so I wasn't expecting dinner when I got there but I arrived just in time.
They had stuffed cabbage and lasagna for their youngest son's girlfriend who I guess is not fond of stuffed cabbage.
Chille! WC's famous black bean (frijoles) chille! with a can of diced tomatoes w/ 'tangy chillies' , minced onion & green pepper sauteed first in 1 tbs of rich olive oil and then left to simmer down, some Grey french salt to add some minerals, with some cool Portuguese bread every now and then to dip as I gobble up the 'hot stuff'! Weeeee!! (Breyers dark chocolate Ice cream bar to take away the after-taste! (lol!)
Like stuffed onions but never tried stuffed cabbage, ... not on the menu anytime soon though! (lol)
WC stuffed cabbage is good! We had it last week.
Stuffed cabbage is super yummy!!!
Can't say it ain't since I've never tried it, but willing to try anything edible at least once! - Never learn anything new if 'ya don't! lol!
Also called
Holopchi, halupki, golabki, pigs in a blanket, holishkes, gowumpki, lumpke
...(From the last thread)
- Jada the French (Grey sea salt has a 'bite' to it, hard to explain and not too noticeable if you just taste the salt, it has to be in the 'brew' itself, it seems to have the effect of MSG as to enhancing flavoring, but with a chemical composition which is found in nature, not man made.
- in the sauce it packs a very distinctive, WALLOP! (lol!)
They're 'Halupki' in my family. Yup. They're good!
Never had stuffed cabbage. What is it stuffed with?
Sacrilege!
No really, I'm surprised so many people haven't had stuffed cabbage...ever have stuffed peppers? Almost the same.
The most ideal stufffed cabbage is made with ground pork and beef (50/50 mix), white rice, I do sauteed onion(some people don't saute it or even use onion), egg, spices(this is where I find a huge variation depending on the nationality)
Mine usually had some tomato in there, too.
Oh yeah you mix in some tomoto sauce. Thanks Harper.
Didn't know how detailed he wanted it.(it's hard to actually try to make it on your own first, you have to taste authentic ones)
We call stuffed cabbage 'Tails' here. lol
Make 'lazy man' galompki.....just cut up the cabbage and add to meat and rice mix.....also 'lazy' perogi, just use egg noodles with cabbage and kielbasa...
Like the Chili, will try to find that 'Grey salt', any special name and where did you buy it ??
Thanks WC. I might pick it up next time. They had several different ones like meditaranian and others.
Chicken paprikash (with tomatoes and peppers from last year's garden!).
Nice, Don!
What's different about grey salt?
It's French. Hee hee he
love stuffed peppers in savoy cabbage - think that will be on the menu sunday!
think it's time to make some chili!!
King crab legs/claws I have in the freezer which I didn't use on New Years, going to oven broil them tonight, some seasoned fries and a simple salad, (watercress & tomato for me Mescaline & tomato for DW).
home made pizza
Anything we can find!
Leftovers!!!
Pizza, had chili in the crock pot all day for tomorrow(always better the next day)
The usual, we went out for fish.
For lunch we had ham sandwiches on pretzel rolls.
We go to a Polish fest and a Ukranian fest every year and have stuffed cabbage and perogis, always very good, better than I can make.
Got home late, went to McDonald's.
Stuffed cabbage is very ethnic. My recipe is similar to Flowerjens. Though I've used beef I prefer lamb. I use brown sugar and vinegar in a tomato sauce. Germanisized with the cabbage it's a sweet and sour dish. There is a Scandanavian version I grew up with that includes raisins with the meat, spices and rice.
Stuffed cabbage is a European take on Middle Eastern (and later Mediterranean) stuffed grape leaves which never included pork but lamb! I grind a leg of lamb to make this dish. The recipe was probably brought to Europe by Jews who adapted the grape leaf version to cabbage. That is why there are different versions depending on whether roots are German, Polish, Hungarian or even Swedish. The Scandinavian version has no tomatoes but beef broth with peppercorns and spices such as cinnamon. It was weird to me at first but delicious. Stuffed cabbage is a traditional winter and holiday dish in my family and every person of my ethnic background. It is the Neapolitan version of a timballo...a big deal, lots of work and simple ingredients.
leftovers
stuffed cabbage got denied - stuffed peppers instead for sunday - she did not want to deal with wrapping/stuffing the cabbage. still good - i'm easy:)
tonight flank steak
Thanks for the picture of 'french grey salt' will look for it!!
You're welcome!
- Pizza night tonight! Weeee!
WC, it's cute how you get excited about pizza.
DH is cooking tonight. He calls himself "The Slow Cook". It's 10:20 and I'm gnawing on the chair. Starving! Well, he served drinks first... so I'm tipsy and starving. Feed me Seymour!
He said he's making fritatas. How long does it take to make fritatas?
For breakfast?
At the rate he's going, I'm thinking yes. For breakfast.
Good smells coming from the kitchen. Maybe he's getting close.
Geez! It's 11 o'clock!
