AMANA RHUBARB CUSTARD PIE

8 inch baked pie shell

FOR CUSTARD:

1/4 c. sugar
2 tbsp. cornstarch
1 c. milk
2 egg yolks

FOR RHUBARB SAUCE:

3 c. rhubarb, cut 1/2 inch
2/3 c. sugar
2 tbsp. water

FOR MERINGUE:

3 egg whites
1/4 tsp. cream of tartar
6 tbsp. sugar

Stir together sugar and cornstarch in small saucepan. Stir in milk and cook over medium heat, stirring constantly, until mixture thickens and boils. Beat egg yolks slightly and stir a small amount of hot milk mixture into yolks, then stir that mixture back into pan. Cook and stir until custard is thickened and smooth. Cover custard to keep warm. Toss rhubarb with sugar in small pan. Add water and cook over very low heat just until rhubarb is tender-crisp - don't let it get soft. Cover sauce.
For Meringue: Beat egg whites and cream of tartar until foamy. Beat in sugar, 1 tablespoon at a time; continue beating until stiff and glossy. Do not underbeat. Drain rhubarb sauce and fold into custard. Turn warm custard into baked pie shell. Heap meringue onto filling; spread over filling, carefully sealing meringue to edge of crust. Bake in preheated 400 degree oven 10 minutes or until a delicate brown. Cool away from draft. If not served immediately, store pie in refrigerator.

RHUBARB CUSTARD PIE

1 pie shell, unbaked
2-3 c. rhubarb, cut up

CUSTARD:

2 egg yolks, beaten
1/2 c. milk
1 tbsp. cornstarch
1 tbsp. flour
1/4 tsp. salt
3/4 c. sugar

MERINGUE:

2 egg whites, beaten stiff
Pinch of salt
2 tbsp. sugar

Fill pie shell to level with cut rhubarb. Mix together all custard ingredients and pour over rhubarb. Bake at 425 degrees for 10 minutes. Reduce heat to 350 degrees and bake until rhubarb is tender.
For meringue add sugar and salt to stiff egg whites and blend with beater. When custard is set, spread meringue around edge of pie and return to oven for 12 to 15 minutes

hmmmmmmm going to have to dig up my Grandma's recipe. There's no meringue on top, just another crust (farm women didn't use eggs for meringues - too expensive - even though they had chickens, they were used for more prosaic uses....). Otherwise the 2nd recipe sounds very much like my Grandma's!

this was a bad weekend. I am missing my Shadow very much and looing for another dog. I had three good possiblities but they didn't work out. My favorite was a dog in Atlanta, Ga. Thought Stacey and I were going to make a road trip to visit her Mom and pick up the dog but got word it was already adopted.
Then a rescue place in Toledo, OH, (where Stacey lives) turned me down because I was over 2 hours away from them. Well, I am exactly 1 hr. 53 min away by MApQuest and you can believe I told them so!
Can you imagine, with over 35 dogs looking for homes at their rescue site they turned down a perfectly good candidate who has her own home, fenced yard and would travel down to see and then again to pick up the dog just because I am a few miles out of their area? I can tell you I was P*** and told them so, but that just means there are two dogs still waiting for homes, not going to be mine.

Stacey wants me to look at Pugs, since that is what my granddoggie is but my last two dogs have been Flat-coated Retrievers and I want another. So I guess I will just keep looking!

As to the storm - it hit Edmonton, bady, but not my corner of Calgary.
It looked black, and we got some rain, but no hail & no damaging winds. We were very lucky. They think a tornado may have touched down in Edmonton, though....
Some of Calgary got the winds & hail, apparently.

We, in Calgary, need the rain - always! It's such a dry, desert-like city that it parches out very quickly after a rain....

Ok I am home from running around town... Well I pulled a muscle in my left shoulder blade and it hurts like the dickens...LOL We only have 3 Salvation Army stores but none have a Frig... We will be fine as I am going to use the little one for right now after I clean it out as it was in the basement and a son used it..YUCK...LOL We do have like I said a small frig... All is good... I am not getting down as that does nothing .... Also last week my husband's company was voting on going on strike... not good... They extended it for another month to talk with company and union....
I may not be on again for awhile as I have been so stressed and running that I don't have time to come... Just know I miss you all and I will check back soon...

Asking prayers for Sister Donna, nephew Connor and my mom.....Donna has just gone back to work after back problems, she fell on the stairs and reinjured her back....Conner (her son) has had two seizures and they don't know why, mom fell getting out of the tub this morning luckily she isn't injured but she is very depressed over my sisters situation......I really worry about her later...am going to try and get her to get a Dr. Appt. this afternoon if I can......sorry I have to rune but I am late for my appt.......will check in later.

Hello everyone.

Some reknowned 'charity' stores around here sells their second hand appliances waaaay higher than us and without warranties. I know of one that don't even bother to wash them prior to selling. Just plug them and if they run, they consider them as fit to be sold. Kel won't do that. They are cleaned, sanitized and he offers warranties. So that benefit our business :D
You are better off buying from a refurbished store that's in business for years.

I don't understand why the pound won't let you adopt one, when you're only 2 hours away Janice. Isn't affection the main criteria? When folks wanted to adopt my rescues, I always ask whether they have a fenced-in yard. That will be next on anyone's list.

Janice we had the same problems trying to adopt kittens a month or so ago. I contacted 3 different rescue organizations and never did get any kittens. One of then had a 4 page form to fill out and then they wanted to do a home inspection and all kinds of other crap. I finally told them to forget it, I was trying to adopt cats not children. Another one told us no because they would have been outside cats. The fact that I already have an outside cat that is 21 years old didn't seem to matter. He has an inside place to go in the winter and a screened in porch for the summer. My animals live better than most kids in third world countries. :))
DH said we will just do without the "home invasion" and buy our critters elsewhere. Why do they make it that hard?

I really don't understand why 'they' make it so difficult for good folks to adopt?
There are 2 rescue operations close to where I live. They are practically overflowing and there will be more due to the growth of retirement communities. Days of old used to be reimbursing the neutering fees, and perhaps the obligatory donations.
So, next, you need proof of higher education or maybe an airconditioned kennel?
I think it depends on the state you live.

You know Juanita, you would think that since they are rescue operations and always say they need more people to adopt they would be a little more lenient than that. You're right, they're felines, not humans, and if they're that desperate to get rid of them then let people adopt them. Maybe someone lurking knows the inside story to this and can explain, cause I just don't get it.

We left the house @ 11:30am Saturday morning and got to Memphis about 2:30pm. Got into our hotel room, a Quality Inn on the complete other side of town from where we were going to party, but that's alright, wasn't going to drink anyway cause of this stupid cold. We unpacked and by then it was dinner time so we headed to Beale Street. OMG what a sight, for 3 blocks of it they block the street off for pedestrians only and it's like a mini marti-gras. Talked to one of the girls I know before I left and she suggested Rum, Boogie for a great band, which we ended up eating dinner there too. OMG the bbq ribs were to die for, the pulled pork was ok but oily. Got our hands stamped so we could get back in later to see the band. Walked over to one of the many junk stores and they were closing in 10 minutes, too bad they lost a ton of business. Got some belly button dusters for my dad as a gag gift and wanted to look for something for my swap buddy, tons of expensive memorabilia but since they were closing didn't have time to find anything. Oh well. Other junk stores had nothing but junk, so that's not ok either. At 8 we went into another restaurant and sat outside and had oysters on the half shell, YUM!! Then at 9 back over to Rum Boogie, their band was awesome and they have played in the same restaurant for 15 years! That's dedication! Went back to the hotel around midnight, the cops came out and the crowd was getting dicy.

Got up at 7am Sunday, ate a little breakfast at the hotel, and decided since the humidity was slightly up, Dave doesn't like sweating whatsoever, we would do Graceland instead of the Botanic Garden. Poo. Boy Graceland has changed since the mid-80's. Love the audio tour of the mansion, the car museum was awesome, could live without the planes, not that big a deal to me. We left there at 12:30pm and drove home. Got to a town on the way and went to our favorite Chinese Buffet, then got home around 3:30pm. We unloaded the car of our whole 2 bags and reclined on the couch and went to sleep. We ate again around 8pm and back to bed we went. I feel so bad with this cold today but what do you do, I couldn't just not go to Memphis...

I can understand that rescue organizations want their animals to go to good homes since many have suffered from abuse or neglect. They also don't want them to go to "hoarders" who keep getting more and more animals even though they can't take care of them. But I was more than willing to give references, including my vet; have a fenced yard and my own home.

I had a friend who had the same problem when she wanted to adopt two kitties. She ended up at the Humane Society and later, when she checked the rescue organization, found those same kitties were still there. And no one would have given them a better home than she does! Give some people a little power and they think they rule the world!

Hi All,
As some of you may know my MIL lives with us and she is 73 years young... Well today we got a call saying her twin sister died... Mary is taking it very hard... She has health issues and she will not be going up North to the viewing... So please keep her in your prayers...
Ok I work for a Vet and have for 15 years now... I don't get it either about our local pound.... I know yours is a rescue but our pound won't adopt out if you live in a certain area... I live on the NC boarder they won't adopt to NC... If you are going to put the dog on a runner to use the bathroom they won't adopt to you either... Forget it if you say the dog is going to be an outside dog... Nope put them to sleep is what they do... I have heard so many true story's about them it is awful... They don't care what someone writes in the paper about them they still kill them.... I did go there to get my two young cats but if I did not work where I work I am not sure they would have adopted out to me as I have allot of animals... Also you cant have a cat if it goes outside nope they kill them rather then adopt to anyone... STUPID!

Don't they understand that animals are animals? Tiga's gone outside for most of her 13 years alive. I wouldn't want to keep a cat in the house all the time. Of course she goes in and out at will, and knocks to let us know when she wants in or out. When I get frustrated is when she wants to be in and out kitty. I don't have a way to put a pet door on the house, so we have to cater to the kitty. I'd rather just wait for the right cat to show up at my door, or buy one from a pet store.
