I just made homemade spaghetti sauce from scratch, using my own tomatoes from my garden. I used a recipe I found on the internet that sounded like it was pretty good... since I had never made it before... and didn't have an old family recipe to go by... no Italians in my family.
It's been simmering for about 3 hours, and has cooked down nicely... really saucy. But, when I tasted it, it's got a strong acidic taste to it... kinda too tomatoey... if that's a word. The recipe called for a tblsp of sugar, and I thought that would cut the acidic taste... but it didn't. I put the meat balls in it, thinking that might help... hey, what do I know?
We're going to eat it anyway, the flavor is great... but, what do I do to cut the acid next time?

Jaye,i went to see Mocha earlier.She had just woke up for getting fixxed.She was still weak and out of it like she don't know where she was.They said that i could have brought her home today,but since she had just woke up i thought she would be safer they until tomorrow.The funny thing is that Rob droped her off this morning and someone we know has boxers and droped them off at the same time.Mocha,thought she was bigger then those dogs and was wanting to attack them.Tell you the truth if they were huge dogs i think i would run the other way because they would be some bads dogs.This one person was wanting to buy her for 300.00 right their and Rob told her NO.That is my second baby i would not ever sell her.
BJ, next time add some ricotta cheese! Not only it will cut back some acid, but gives your sauce an added dimension.
Ricotta cheese is not only used for lasagnas, but lately it's appearing more in pizzas.
I also like to use grated parmagiano Regiano (Sp).

Can't you all believe I cooked today! Made use of the leftover brisket which I've frozen Monday. Cooked beef jambalaya.. and as the Cajuns would say.. Ca c'est bon!! So, that's what we had for supper.
For a change, we stayed home.. :D
My husband's the cook around our house, but unfortunately he doesn't do anything with tomatoes as they give him big time heartburn. I have one of those pre-seasoned pork loins on the grill right now. I guess I should keep an eye on it, huh...
Noooooo.... ignore them.. the pork loins will holler at you when they're done!!

The problem is it says to heat it up til the center is 160 degrees, I don't have a meat thermometer.
Slice it open, if it's not pink anymore, it's done!!
Ooopseeee! It's not done, back on the grill it goes!
Ricotta cheese is not something I usually keep in the house... it has to be a very special occasion to have it here at all... and I don't know that I've ever actually bought some... come to think of it.
It was actually very good... wasn't quite so acidic with the meat balls, and the pasta... Don asked me to keep the left over for him to eat while I'm gone.
And he really doesn't like left overs... so, I suppose my spaghetti passed the "left over" test.
BTW... I'll be gone till Thursday... Leaving tomorrow morning ... coming home Sunday late, then flying out Mon morning again, coming home again Wednesday night ... LATE.

Talked to my cousin's wife tonight...Al is holding his own so far....they have managed to get the chest pains stopped....he goes in for test and an angio-something tomorrow at 2:00 to see what is going on...if it is something they can fix they will go ahead and do the surgery at that time....Please keep him in your prayers, and also my mom...she is taking this very hard.... Al is more like a son than a nephew her......

Phyllis you are so lucky.....you don't know what I would give to have a pickup.....we haul all kinds of stuff in the car that we shouldn't....and I always need to make a dump run, or would like to get mulch, top soil etc. but DH says we don't need a truck.....if I ever find one I can afford "I am getting a truck"....from the time I was around 5 years old I was in love with our '53 Dodge Pick Up and would love to have one again!

Oh look at the puppies!! Dave had Dobies when he was growing up, then they switched to Rots, both are excellent dogs.
Let me tell ya, Tiga was so hyper last night she ran laps, tore up my arm, got into the closet where we keep the plastic grocery bags and got them all spread all over the house, ran more laps, peeled out in the kitchen, then skidded in the kitchen for 2 1/2 hours last night! I never thought a 13 year old cat could wear me out like that!
Marylin Your Nikki Is a very pretty Dobie... so far Bela is very good but still just a puppy and very hyper...

Ok so quiz for my gardenning friends... I was given a bunch of Irises but the bloomstalks are very different and the leaves are very slender and thin... What kind is this? apparently the lady is losing her home and giving all her plants away so I will be heading that way later after more..

Your dobie will learn, she's young and a pup. Nikki has a lot of years on her, so she's laid back, doesn't play as much. do you give her a tennis ball to play with, you'd be surprised at how much that occupies them.
they are a discipline dog though, very easy to train, and once trained, will be the best dog you can have. Yours is sweet and reminds me of Dee, she was a red. she loved her tennis balls, and she would steal the guys lunch bags from the shop,,,,we used to tease and call her Yogi.
Nikki likes her ball too. She doesn't run and fetch like she used to, but she still likes to get out there with me and play 'keep away'. You can see she dropped it at her feet in the pic, when I walk toward her, she will pick it up and prance to the side to let me know it's hers, and I'm not getting it that easy. She loves attention. all dobies do, and they will be loyal to a whole family, but they single out one to really attach too.
Looks like the iri may be a kind of flag... Dunno gonna look into it..
Tennis Balls ....lol she eats them in about 3 days each... We had a few basketballs and she carried them around after she popped them for a bt then lost interest... She has eaten all of her stuffed babie she had from a puppy in the last 3 weeks and wow a big rawhide knot bone in 2-3 days... Th eonly thing that has survived is her rope bone from tug o war but shes trying now to untie the knots. She is so funny.
When she is rotten she is sooooo bad but when shes sweet there is no deying shes the baby of the house. Even as big as she is he climbs right up in the chair with me or pushes me half off the couch.. lol Most of the time she sneaks in to be in my sons bed while he reads through the day and before bed she goes with us to tuck them in at night.

Morning everyone! We are back from our Dr trip, all is well with my back! I just need to make the trip every 4 months, to satisfy workers Comp! Outback Steakhouse was really good. We did not eat anything spicy. We had a salad and french onion soup! MMMMMM!!!!!! I went to Hobby lobby, and saw the pretty stuff for fall, then I turned the corner, and saw they are putting out Christmas items already! Geesh, talk about being pushy!

donna, Nikki can pop her tennis balls too.,,,I would get her the extra heavy duty balls, and they would last maybe a week each. kept her from chewing up everything else. and they were cheaper than anything else she could have chewed up. :)

Marilyn and Donna, I knew of a Dobie that once turned on his mistress. The couple had him when he's very young. But he chosen her DH to be the only master. Luckily, he was home when the Dobie just started snapping at her. I really think it's neurological, cause they bought that Dobie at a puppy mill.

There is no doubt in my mind that my Dee would have turned on my hubby,,,if she was on the bed when he came to bed, he wouldn't make her get off, he'd sleep on the couch. That's how protective she was of me,,,,and I trusted her with my life. We ended up getting a divorce.
Nikki is like that now with the one I'm separated from. There is no doubt that he would not make it through my door if he tried.
Now my kids,,,they both loved the kids and I think they both would give their all to protect them too.
I will never have anything but dobies. They, like the pit bulls today, got a bum rap years ago. everyone is afraid of them, because they don't understand them. If they are raised right, in a loving and caring environment, they are a very docile animal, just don't threaten their owners. they are the most protective of dogs.
Rots are the same way. My next door neighbor has two of them and they are the biggest babies, and very good dogs. Their male likes to play fetch, and he'll bring the toy back, but then plays keep-a-way with you.
Me and Tiga (Teega) play every night at 9:00 (I've learned to be faster than the kitty :p ), then at 10:00 if I'm still up she tells me that it's bedtime and walk back and forth from me to the bedroom cooing all the while.
Jaye, they are to die for! Prime rib is very tender! The ribs have lots of flavor! You should see my Dad when he is done eating. Rib sauce from elbow to elbow!!! Finger lickin good!

Anyway, Ladybug is supposed to be a husky/lab mix, but there has been some discussion about some rottweiler in there too. We got her when she was 7 weeks old and she is 6 now. She is very obedient, loves to play, but is too independent to be a lover. I need a lover dog. We are looking into getting another puppy of some kind before she gets too old to play with it.

Evening everyone......Doris' memorial was one of the nicest ones I have been to in a long time....such a wonderful family.
Mom got a call from my cousins wife.....they did a lot of tests and things that all came out well, Al has some kind of problem with his neck...he will probably be going home tomorrow....I don't know if that means he did not have a heart attack or what...but at any rate it is good news!!! Will know more later after he gets home and mom has a chance to talk to him....but Our Prayers are answered. Thank you all so much.
