What ya got cookin'?? How'z about cooking something up with me??
*************************
I know the picture does not match the content of this post, but I have to start somewhere!!
I would love to know what y'all are cooking!! And how y'all are cooking it! I know us Nor'Easters have a way different palette when it comes to the comfort foods than say the South, for instance.
I will post a picture of what tonight's meal came out looking like tonight, but here's the plan:
************************
Grilled Chicken Tenderloins, with Italian herbs, garlic and a lot of fresh ground black pepper. (I love black pepper). I use my fav. cast iron skillet with the raised ribs.
Pasta (al dente, of course!) with Fresh Broccoli (one of my fav. veggies, and good for ya, too!) with my home made White Sauce.
I always add chicken bouillon to the water when cooking the pasta for this.
I warm the broccoli in with the pasta a few seconds before I remove the pasta from cooking. Maybe a minute in the hot bath, then everything gets drained well.
If you never make a white sauce, it's REALLY easy.
2 cups milk (warmed slowly to a boil)
2 Tbsp Cornstarch (Mix completely with about 1/2 cup cold milk, add to warmed milk when it just starts to boil)
That's IT! Of course, it's the seasonings that make it delisch!
To the cold milk I add:
Fresh Ground Pepper (of course!!)
2 teaspoons of chicken bouillon (I like Herb-Ox brand, but, if you have a better one, Go For It! esp. when salt is restricted, or you want to avoid MSG) according to label directions.
Garlic Powder
Onion Powder
AND!! A couple generous handfuls of my fav. grated cheese. Usually Parmesan or that Four-Cheese Mexican Blend and Mozzarella.
NOTE: Cut out the salt and use chicken broth with out it and a lot more herbs and spices! You can also use low fat milk and cheeses. No different, except at the waistline, though, this recipe is pretty low cal, and you know exactly what is in it!
Hey! Good Lookin' .......
So .... How 'bout it???
Whatcha got cookin'??
Oh man am I hungry! Do you ever do broccoli rabe?
Yes, I have seedlings started for Broccoli Raab, I think it is.
This is the first time trying to grow it, but I saw some seeds in the NE seed exchange and I grabbed them.
Since I became unemployed we're just doing the basics. Lots of Chicken and pork...veggies. Soups with the leftovers. DH doesn't get it but I think leftovers are the best part. Mom is bored and baking A LOT!!
I love it with pasta and red pepper flakes.
We like the Goya bullion.
Clever uses for left-overs are a BIG hit over here!!
Share what you do! They (left-overs) are important now more than ever.
I have been baking a lot, too ..... Way cheaper than buying made, AND you know what's in them.
I'll have to try Goya! I just been using what I am used to.
I have to go out for awhile but leftovers is my middle name.
I cook for one and when its busy season I try to vary the leftoves so I dont get bored.
I also use a lot of prepared bags of stuff. Like cole slaw, I just cant use a half a cabbage befor it turns black.
I'll be beck.
I always have leftovers for lunch. Today is my easy garbanzo bean tomato sauce.
Brown garlic in olive oil.
Mash up a can of garbanzos.
Add the paste and cook for a few minutes - just to 'toast' it a bit.
Add pepper (salt if you like - I don't), thyme (a palmful) and some red pepper flakes (a bit less than a palmful).
Add 1/2 cup of white wine. After a few minutes add the 28 oz can of crushed tomatoes, or fresh if you have.
Bring to bubble. Lower heat and let simmer.
Cook your pasta and you're done!
Easy, healthy and delicious!
Sounds like lunch for me! I have all that on hand!
It's my kids' favorite meal. And my little one is a real pain when it comes to eating. Thanks to Rachel Ray! (The fact that she is hot is mere coincidence.)
The meal was:
Fried Ham Steak
Boiled Potatos Cubed
Now we have leftovers. Some ham and about 2 cups potatos.
What meat you have left cut in bite size chunks, ham, porkchop steak, if you have some uncooked burger fry that up first and set aside. You can mix different meats in.
Brown the potatos in good size frying pan in butter. When they start to get brown toss in the meat. Cook till the meat gets hot. Stir in 3 eggs - quickly. Stir until the eggs are cooked. This only takes about 15 minutes and not much of a mess!
Husband uses salt and pepper and eats it. I put some ketchup on the side.
Oh, that is one of my favourites!!
Grandmom always froze any extras .... "It's good enough for soup!" She's right!
That sounds very good, Sherrie! Hearty breakfast! or, for any meal really.
You could even add an onion diced up and sprinkle with grated cheddar when it's done...mmmmm
Yummy - though I would use olive oil instead of butter.
Mom always did ours in butter ... I have done it both ways. I love nothing better than a baked potato with only butter and pepper.
Just remember .... butter burns .... keep the heat down!
(points to self) butter addict. DH uses olive oil sometimes, I can always tell...I find it leaves a funny after taste...
yup...a lot like my Moms Hamburger stew...Fried hamburger, macaroni, any veggies, can of tomatoes...done, but soooo yummy.
Now, one from my mother:
Warm milk .... add Turnips ..... viola! Soup!
I nearly gagged when she made us eat that for lunch. Wait ... I think I actually did oomphie on that one!
i-yi-yi!!! (or how ever that's spelt)
Good olive oil should never leave an aftertaste. I love Bertolli.
I like boiled turnips with butter.
We use Smart Balance instead of butter...watching the cholesterol....
Had ham steak last night also... cooked in a little water with ground cloves and mashed taters I put a couple shakes of Mrs Dash Garlic and Herb in the water when boiling the potatoes...yum
So do we. It really tastes great.
Check this out.

If it really tastes like bacon I'll be using that all the time.
I LOVE mushrooms, esp on pizza...oh man now I want a pizza
let's see lunch today - turn ignition key, drive to small market, walk to lunch section, pick up sushi, drive home, mix soy and wasabi, eat. (tuna, shrimp, yellow tail)
oh the appetizer was left over strip steak, corn, and mushroom/garlic - it was really enough for lunch but had the urge for sushi
Yuck!
need those amino acids and mercury
I love fish/seafood!! Funny thing is the 7 cats never bother me while eating but the 2 dogs just love the stuff!!
Just finished a sardine sandwich.
3g you can have ALL the sardines you want - can't get those down.
Willie you need to change the tread name to hey good cookin - my wife sees hey good lookin there will some splainen to do
hehehe..I love sardines.
When I was a kid in school Mom sent me with lunches of hard boiled egg and a hunk of salt cod. The teachers always thought I was neglected, and sent some letters home, but it was my most favourite lunch of all!!
I prefer neglect.
I never had to worry about some kid stealing my lunch!!
i bet!!
My parents and sis love sardines and pickled herring.
Tonight:
Corned beef(was half price) with scalloped potatoes. Lots of grated cheddar on the potatoes.
