Okay, I'll scrap the idea of making cranberry sauce from scratch!
Love these exchange of experiences... saves a lot of disappointments.
One thing I used to do with carrots, is to slice or julienne them, and saute with butter and add honey. Now I have to cut back on the honey.
Call me naive.. but I've never heard of Jiffy Corn Casserole :(. Is the recipe on the Jiffy Corn mix box?
My best Thanksgiving memories was when I had roast turkey with chestnut stuffings... and company got drunk on sweet potato pie, cause I had too much bourbon in it :D

Here ya go, Jaye... it's really good.... a family favorite.

JIFFY CORN CASSEROLE

1 can whole kernel yellow corn, undrained
1 can cream style yellow corn
1 (8 oz.) carton sour cream
2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted

Mix all together and pour into large, lightly oiled casserole dish. Bake at 350 degrees for 55 to 60 minutes.

They are easy but take some time to do.
Supply list : Parifin wax, 1 jar (1 step down from large) Peter Pan Peanut Butter or your brand , 1(abou the same as chocolate chips sizebag) small bag powdered sugar, 1 regular sized bag of semi sweet chocolate chips (mini melts fastest), wax paper, toothpicks, flat cookie sheets or pans
-- I think thats it... Have to check to be sure...lol

First Mix the peanut Butter and powdered sugar into a large bowl until it blends evenly and is able to be rolled into small balls without falling apart...

You can place these in the fridge in the bowl stacked until you are ready with the rest If they dry out to much they will fall apart..

Get your flat cookie sheets out and line each one with a piece of wax paper. At this point you can get your PBB (peanut butter balls) out and place them on the sheets evenly with a toothpick in each top center. ** This makes the step of dipping alot faster but you can wait to pull them from the refridgerator..

In a small saucepan chip in 1/6 a bar of parrifin wax on LOW heat.. If you do this on high it can catch fire trust me! As it begins to melt add in the whole bag of chocolate chips. These two items will need to be constantly stirred lightly or it will burn to the bottom of the pan and leave a burnt chocolate taste in the whole pan.

Once the two items above have melted down nicley to a sryup consistancy you will proceed with the dipping process keeping the burner on warm setting .

If done as directed above as soon as it has melted begin picking up the PBB with the toothpick and while tilting the pan dip the balls into the chocolate without skimming the bottom if possible. Keep a circle around teh top open to expose the Peanut Butter and place back on the wax paper. The chocolate will harden faster than you think and it adds weight to the PBB so watch that you dont drop them into the pan. That creates a huge mess and its hot so you always burn your fingers getting the PBB back out once it falls off the toothpick.

If you have left your PBB in the refridgerator you will need to at least get your pans ready and lined with wax paper before you begin to do any melting or your chocolate mix will burn. Once you have got your pans ready and your chocolate is melted get the PBB out and start one at a time dipping them as directed above. This takes more time especially if any fall apart in the bowl.

Once you have a pan full place them in the refridgerator or freezer to finish setting the chocolate and you are done.

This recipie makes about 200 so be ready .. I m sorry im not more specific but I do it all from my head and couldnt tell you where the recipie is.

We do sausage balls for Christmas too that are very easy... I like easy recipies and the kids are starting to remember what goes in with each one so I guess they are catching on...lol

More than anything with the Peanut Butter Balls you have to resist licking your fingers.. I get a toothache and a Migraine from the sugar every time I make them...lol

Oh my but yes the buckeyes are the best!! I use dark chocolate for the dip mix--but I love dark chocolate. Be forewarned these are absolutely positively, with out a doubt addictive!!!!! We didn't call them buckeyes--very original name here: peanut butter balls!! How is that for a gourmet sound to it? LOL

I have gained 10 pounds today just reading all these recipes. Yikes, gotta stop this!!

I think it's important that our new sistahs learn of this Very Important Recipe from our sistah, Audrey.

Audrey's elephant stew:

Take 2 elephants, cut into bite sized cubes.
Clean 3 bushels of carrots, cut into pieces and add to the elephant cubes.
Add 4 bushels of sliced red onions.
Add about 4 bushels of diced potatoes.
Cover with water, add salt and pepper to taste.
Cook for 3 days. At noon on the third day, add 2 rabbits. DON'T PUT MORE THAN 2 RABBITS IN!! Noone likes to find a hare in their stew

I suppose I need to call mymom and find out what she wants to have... Normally we do a big dinner here at our home with mom, my sister (DH and 2 boys) and my grandma. This year grandma is going to my aunts in port orange and my sister wasnt supposed to be in town but now she is but is not comming to our house. Shes cooking for her husbands family at her house. She said we could come but really didnt want to be around that many people.. I like small and simple.. not formal.. So mom says she staying the niht here and sleeping in Tristens room .. Sounds like fun.. Just have to figure out what we are eating

Here's the recipe BJ.
BAILEY'S MARBLED CHEESECAKE
Crust:
4 tablespoons unsalted butter, melted
1/4 cup sugar
1/4 cup cocoa
1 package graham crackers, ground to crumbs in food processor
Combine butter, sugar and cocoa powder. Stir in crumbs. Press evenly over bottom of greased 9-inch springform pan and bake at 350 for 10 minutes. Cool pan and grease sides.
Filling:
3 8-ounce packages cream cheese, softened
3/4 cup sugar
3 eggs
3/4 cup Bailey's Irish Cream
2 squares (2 ounces) semi-sweet chocolate, melted
Beat cream cheese until smooth. Gradually beat in sugar. Beat in eggs, one at a time. Blend in Bailey's. Pour about 1/3 mixture into a bowl and stir in melted chocolate.
Pour half of plain mixture into prepared pan. Drizzle with half the chocolate mixture. Repeat layers. Make a marbled design by gently swirling batter with a knife.
Bake 10 minutes at 450, then 55 minutes at 250 or until cake tests done.
