Kanita, thank you for sharing those lovely irises. I took a whole bunch, and felt like a piggy (but I only ate one lemon bar!), but I gave them a good home. They are planted in a spot where I'd had some planted before, but some construction workers used my iris garden for their trash heap. I've been trying to rebuild it when I can. I love the darker purple hue of the ones you shared. I'll ask around to see if anyone wants some.
I can't wait to try out the lemon bar recipe. I really enjoyed the taste treat!

Thanks for the picture of the Iris. I'm so glad I got a few. Looking forward to the blossoms. Also, I really enjoyed your lemon bars like everyone else. I didn't see the recipe you spoke of posting. Did I miss something? I'd sure love to have it.

I'm glad everyone liked the irises. I still have a ton that I am trying to give away.

Here's the recipe. I guess I posted it over on the other thread about the mini round up.

Kanita’s Lemon Bars
Ingredients:
Crust
• 2 sticks (8 ounces) butter
• 2 cups flour
• 1/2 cup confectioners' sugar
Mix above and press into ungreased 13x9x2-inch pan. Bake for 13 to 15 minutes. Crust will still be very light.
Layer 1
• 1 8oz pkg Cream Cheese (softened)
• ½ cup sugar
• 1 egg
Mix and pour onto crust after it has been removed from the oven.
Layer 2
• 4 beaten eggs
• 2 cups sugar
• 4 tablespoons flour
• 1/2 cup meyer lemon juice
• 2 tablespoon finely grated lemon peel
• sifted confectioners' sugar
Preparation:
Blend eggs, sugar, 4 tablespoons flour, lemon juice, and lemon peel. Pour over first layer of cream cheese filling. Return to oven and bake at 350° for 18 minutes. Loosen around edges, cut into bars and sift confectioners' sugar over the top while warm.

I just e-mailed this recipe to my sister and she said we could make them for Easter while at my sister's in Minnesota and then sit in the closet and eat them all ourselves. A sister after my own heart.

I am flying the opposite direction on the very same day Samigal is flying; we might run into each other in the Minneapolis airport. But I am headed for Palm Springs and the sun with my daughters.

We had a false alert - a week of Spring-like weather (enough so all the snow melted and the ice went out of the lake) and now it is back into the 20's at night. Rains one day and snows the next.

Wcgypsy, my sister lives in Fallbrook so we will be flying out of San Diego. Now I'm having some mixed feelings about going, they change from day to day. I'm pretty much a homebody so I don't get too far from home.

I'm getting hungry already for lemon bars too.

Go,Pegi.....gives you a new outlook and then it's great to be back home again, too. It's just the bother of getting there.....I'm more likely to get in the car and drive there than to have to go to an airport...lol...
