Hurry up Marcy! Kel loves caramel too!
Play hookey, and tropical gardening in the greenhouse!2
Ok..I am baaccccccck!! LOL!
Here is the caramel recipe Texasgal. BTW...this recipe is from a German Baptist cookbook I have called...Far Above Rubies.
Ingredients
1lb. salted butter
2 lbs. light brown sugar
2 cups white Karo
2 cans Eagle Brand milk
2 tsps. real vanilla extract
Method
In a heavy pan, melt butter over medium high heat. Add sugar, stirring constantly. When blended, add Karo; blend well. Add milk. Cook to 238* stirring constantly. Take off heat and add vanilla. Pour into buttered 1 inch deep cookie sheet. Cool, and cut into 1 inch squares.
Wrap each in waxed paper, and chill. Makes 5 lbs.
Just a few notes for those of you whom have never made candy.
DO use a very heavy pan. I use my pressure cooker pan. And DO stir constantly. And DO only use medium high heat to keep from burning.
Another help is to line your baking sheet with foil....and butter the foil.
Then when candy is cool, you can lift the foil and all out, and lay out on a cutting board to cut. Just makes it easier.
Hope you all enjoy these. Oh...and DONT use unsalted butter like I did...lol! It needs a bit of salt to counteract the sweet. One lady said she even adds a pinch of salt. Also...this will take a good 20 minutes to cook...so dont be in a hurry. :))
Don...thanks for letting me hijack your thread!
P. S. It would be a grea help to have your waxed papers cut already too. That is the most time consuming part!! Or have someone to cut them while you cut caramels....LOL. I didn't get any help!
Thanks...you all know what I'll be doing this w.e. At least 1 recipe!
You are most welcome! I hope you enjoy!!
Karo? we don't have that here ...is it like veg fat? recipe sounds great!
Tm really the birds ate your pods? golly so far I haven't had those kind of things happen here, even the fruit apart from the grapes and figs are mostly left alone, I feed my birds every morning perhaps that might be why, however I will keep a careful watch! thanks for the warning.
Bats sometimes eat the fruit but only once in a while, I will buy a bird net next time I get to the shops just in case.
Well it is almost here, can't believe it Christmas has come so fast again can you? I hope everyone is enjoying the vibe and the love ...
and the caramels :)
chrissy
Karo is white corn syrup.
Oh Birds that steal Tman's seed pods, drop off those seeds here!!
I feed the birds here too Chrissy. If they be hungry enough, guess they'd gobble up anything! Well, at least they're not daturas!
Potted one NOID brug cutting with one inch roots. I use Miracle Grow, TMan and added some garden gypsum. Not taking any chances!
This Christmas is more special...my first with DGers!!
No problem Marcia!
Why mess with the wax paper, can't it store like fudge?
Heck just eat it right out of the pan, with spoon!!!!LOL
Probably just can't eat one piece anyway!!!! LOL
Chrissy the seed ponds were gone,so I expect it was birds, you know they do eat seeds!
Altho might have been squirrels, altho,Cheryl Alger, who lived in Glen Forest,WA.
told me the cockatoos ate everything in sight, farmers said they were pest, eating all there
crops planted!!!!
Jaye sounds like you got one going for sure.one inch roots!!!
Keep moist, not wet,not dry,and watch for those spidermites they get around quick and do severe damage fast!
Tman, yep, I'll be faithfully looking out for spider mites!
I have the giant She oaks to keep the cockies amused ...living so close to the mountains I think they feast in so many big trees up that way that they are not hungry, they come in when the she oaks have their little cones on ...I get whole flocks of the big noisy black ones ...they sit there cracking the pine nuts open and shrieking so loudly they bust your eardrums, however it is an amazing sight, beautiful really ... as for the sulpher crested ones they are like gangs of destructive teenagers in some areas, I used to live by a river about twenty years and flocks would fly in every afternoon ripping up the gum trees twigs and dropping them ... when they got bored with that, they would start on any timberwork around the place, we had a beautiful timber deck looking over the water ...this became one of their favourite places to sit and chew on the railing ...the noise from their screeching would be deafening and you could not speak on the telephone, have the radio or telly on because you couldn't hear yourself think, it was made worse because the river ran through a valley and it caused echo, finally the residents after going to the media about terrible damage, caused the wildlife people to trap them and relocate them to a national park some hundreds of miles away.
The cheeky ones up in the mountains hang around the football fields bludging food from the people there,so tame that they come right up and grab food from your hands! I am so far very blessed that way except I forgot that in the drought the rosellas do take a liking to my apricots, the grass budgies just hang around out in the grass eating grass seeds.
Now what was I talking about? ...oops gotta go take my bro to the hospital for his op ...bye!
have a good one
chrissy
I forget too!
Seeds!
Be sure to keep an eye on them as soon as they are ripe, make sure get them and not any
of mother natures critters!!!
Oh wow!
Ain't you a little darling!!!
I'll wait,go try it on today,send picture,in D-Mail!!!LOL!!!!
Heck what the women wear today, hardly would phase anyone, especially on the beach!!!!
LOL TM! Oooooo, Christi, sooooooo C U T E !!!!!!!
Thanks Marcy for the recipe. I have only made fudge, a looooong time ago......this should be an experience!
Hi Jaye! Good luck with your cuttings!
Hi Chrissy! Chrissy, cover the seedpod with part of a pantyhose! That's what we do with our daylilies. It might save a few.....you may not be able to every last one.
I can get several "covers" from one pair, or a couple from the shorter individual ones. It works!
Awww LouC..I couldn't help myself. I had to look....lol! That is sooo cute!!! I love it! I always wanted a grass skirt when I was a little girl and never got one.
Don....I guess you could leave the caramels in the pan , but I need my pan for other things...LOL! Besides...easier to store when wrapped. Then you can just put them in a Ziploc bag. And yeah..it's hard to eat just one. :) And it's way too hot to eat out of the pan with a spoon!
That's how we would do the fudge....out of the pan with the spoon! (Half the time it wouldn't get hard.....) LOL!
Chrissy, you put a smile on my face describing the antics of your local "nuisances"!! The parrots, macaws, budgies...heck most birds are very intelligent. Considering what little brains they have! No...I wouldn't want to live too close to a big population...I might need some nerve pills!
Christi....you are sooooo cute.....echo that again!! Yeah, I had one too around 5, but that's before the Muslims in Singapore got too fanatical on the dressing code!!! True Tman, nothing faze the kids here....all those pants waiting to be pulled up and 'thongs' that's only good as sling shots!!
Marcy and Jeanne, I had never made caramels. Got a long list of "honey do" for Kel, might just bribe him with that!!
Pepper gf...hope all's well with you!
So far so good here. Most of the ice and snow is melted except on gravel and heavily shaded areas.
More coming in this weekend but not sure what exactly the storm's gonna do so we are holding tight and waiting.
AAAwwwww....you're so sweet. Couldn't find the picture of my mother with me...she was a looker...so was my dad. Lucky girl.
LouC
T77,oh yes those days as kids trying to make fudge, stiring and stirring, and it never would thicken!!!
Pour it in the pan and everybody would grab a spoon, before you know it everybody
had chocolate all over there face and hands!!!LOL
Pepper they ain't saying how much snow will get this weekend!!!
Oh LouC you are so adorable! I bet your daddy just loved you to bits!
I had a grass skirt and a coconut bra for a dancing comp once I won the Charleston and the Hula! copied from the hula dancers in Adventures in Paradise, ha ha ha I was 13 and soooo proud!
so much for three years of ballroom training ...I was a naughty girl and prefered Latin American and jazz ballet ...anything exciting.
LouC you are still beautiful!
Hi everyone else hmmmm candy and fudge making ...great way to feel all festive and it feels so great to say "oh yes I made it" I think the chocolate will be enjoyed this year it is only 75F and still raining
only 3 dryish but mostly grey days so far this Dec.
Keep cooking everyone! how many more sleeps?
chrissy
Not enough! All of this "to do" has drained my energy! (What little I had to start with....haha) I was wanting to make cookies, but don't know if that will get done, if not before Sat. maybe Mon. Just not enough time.....
Aw Christi, you look like a little angel in that photo with all the blonde hair! Cute as a button!
Thanks Marcy for the recipe, I have all the ingredients in the pantry and won't have to go to the store - my grandson is visiting and he likes to cook so I think we will have a go at your caramels, but I am with TM, eat 'em straight out of the pan!
Jeanne don't try to do too much, it's no good to wipe yourself out and have no energy to enjoy the season...
BHMom....watch out!! don't burn your mouths!!!! :))
oh we'll be careful - but what a way to go....yum!
Yesssss!!! Hey...let me know how they turn out..ok? All of you!
Aww Jeanne, I wish I'm next door to you..I'd be glad to help! (at least lick the bowl, lol)
Marcy, I wonder if toasted ground almonds could be added to your caramels? There's also Magic Cookie bars that I love and I'm sure some of you had tried that!
Oh well, extra units of insulin for Christmas!
Jaye....I would think you could add any nuts at the end when you add the vanilla extract. Try it and see!
DG is reknowned for its' plants enablers. Add yummy sweets enablers too!
Ok..recipe's simple enough. Nuts for the nuts!
Ok were goner fix snicker doddle cookies later this evening!!!!
Bought a big bag of splendia, just sio I can eat all the cookies I want, like I wouldn't of have anyway!!!
I have one of those earth star plants,I think is in the bromie family getting ready to flower, kind of looks like a flower daisy bud, that wasn;t there last week, anyone seen these flower before??
No....I have one, but it hasn't flowered?
Not the star one, of course you'd share it with us once it blooms, right Tman?
Can you actually bake with Splendia?
Heaven, Splenda can be used in the same proportions as "sugar". Ain't it great?
Indeed it is! Good news for diabetics, then.
You bet!
I'll be a proud papa when that one blooms!!!!
Heaven, you've got to start watching those commercials!!!LOL
Yes, Splenda's really good! I need to get some more!
Nuts in the caramels sounds good! Tasty! Yum Yum!
I am going to take it easy....Sunday will truly be a "Day of Rest"! or Day of Collapse......and Monday! Then Tuesday..... cook, cook, cook!
Whoa there Jennie..don't push yourself to get it "all done"!!!!
Tman, it seems the commercials are longer than the shows featured themselves! :))
Even PBS now has commercials, pre-show :(
Hi everyone! I bet you are all in bed by now ...my guests have gone home and the night is hot 80F and very moist.
Tm I think perhaps it might be time for Xmas in the greenhouse :)
I thought now that everyone is full of caramels fruit cake and cookies you might like to see a couple of pics (only little) of some ozzy Christmas lights (by the way I can hear bats outside I hope they leave my brug seeds alone) well here goes
WOW!!! Chrissy...so beautiful!!! You must really enjoy decorating. That huge face, is that made out of plywood? A handsome Christmas guardian, I think :) I could imagine you have lots of visitors just for your light show!
Thanks for sharing, Chrissy.
