New Year dinners

Fairfield County, CT(Zone 6b)

Made a gratin of potato and Jerusalem artichokes for lunches this week.

Thomaston, CT

Yummy...I haven't had Jerusalem artichokes in a long time....today made a ham, & a sweet potato-apple casserole....sister brought green beans...

central, NJ(Zone 6b)

mmmmmm sweet potato pie, love the breads too

I did bring a tray of Kolaczki pronounced klutchkey once but not a mixed tray

central, NJ(Zone 6b)

I was in charge of community time at church did a winter theme, tried to have everything blue and white- white chili, fresh marinated mozzarella, cream cheese spread and crackers, cheddar cheese popcorn, marshmallows dipped in blue sugar, even found blueberry juice for the kids, one of the ladies made a cake and frosted it white

Fairfield County, CT(Zone 6b)

The only pie I like better than sweet potato is bean pie. Haven't had a bean pie since I left California.

Thomaston, CT

Whoa....what kind of beans, Memory? Son & his family came for supper last night, so I got rid of a lot of leftovers!

Fairfield County, CT(Zone 6b)

I looked at recipies on-line for Muslim Bean Pie and it looks like they use navy beans. Here is how I used to buy them when I lived in LA http://articles.latimes.com/2011/jun/13/local/le-me-bean-pie-20110613.

Thomaston, CT

The pies sound kind of weird....is anything mixed with the beans? Like custard, or fruit?

Fairfield County, CT(Zone 6b)

Nope - just the beans. It looks like a pumpkin pie and it is to die for!

Hillsborough, NC(Zone 7b)

breaded and fried pork cutlets (taste better than veal and less expensive! Pork and beans (doctored up with onions and honey) fresh fruit and a roll.

I just took down the tree and needed a quick something to cook. I sure miss the tree already -- so sorry to see it go. Waited as long as I could.

Lower Hudson Valley, NY(Zone 6b)

Anyone ever try Dogfish Head beer? Just bought a six and like it! Tried this one:

Mount Bethel, PA(Zone 6a)

We always get this when we're at the restaurant in Rehobeth and everyone enjoys it.

South China, ME(Zone 5a)

Yank, I found a couple recipes for it:
A Bean Pie Recipe

2 cups Navy Beans (cooked)
4 Eggs
1 14 oz. can evaporated milk
1 stick butter
1 teaspoon nutmeg
1 teaspoon cinnamon
2 T. Flour
2 cups Sugar
2 T. Vanilla

Cook beans until soft. Preheat oven. to 350 degrees.

In electric blender, blend beans, butter, milk, eggs, nutmeg and flour about 2 minutes on medium speed. Pour mixture into a large mixing bowl. Add sugar and vanilla. Mix well. Pour into pie shells. Bake about one hour. until golden brown. Makes 2 or 3 Bean Pies.

South China, ME(Zone 5a)

INGREDIENTS:

3 (16-oz.) cans of any colored bean, drained and mashed
3 large eggs
1/4 cup melted unsalted butter
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1 tablespoon fresh lemon (or orange) juice
1 cup evaporated milk
1 cup brown sugar
1 unbaked (9-inch) pie shell

PREPARATION:

Preheat oven to 450F

Combine all ingredients except pie shell. Stir to blend. When well combined, pour into pie shell. Place in preheated oven and bake for 15 minutes. Lower heat to 350F and bake or an additional 30 minutes or until center is set. When serving, add a dollop of freshly whipped cream to each slice.

South China, ME(Zone 5a)

This one describes it just like you did, it read.....
"This is very good and reminds me of pumpkin pie, except it's made from beans. "(To get the beans smoothly mashed, I would recommend a food processor)

Fairfield County, CT(Zone 6b)

So are you going to try it?

South China, ME(Zone 5a)

Thinking about it. :)

Thomaston, CT

Oh, that doesn't sound too bad now that I know the other ingredients.....making yellow split pea soup for tonight.....

Fairfield County, CT(Zone 6b)

Celeste - maybe use cannelini beans instead of navy beans?

S of Lake Ontario, NY(Zone 6a)

The good news is that I felt well enough to go to work today, the bad news is that I was exhausted after, so went to Wegmans to buy their $6 meals. They went up to $8, but was really good.
Had stuffed cabbage, Mac n cheese and artichoke and asiago croquettes. Not the healthiest choice, but worth not cooking.

(Ronnie), PA(Zone 6b)

Chicken "Pie Pie", salad and broccoli rabe. Frozen pizzelles from christmas for dessert.

Lower Hudson Valley, NY(Zone 6b)

Hope you're better fast, Deb. What do you think it is?

central, NJ(Zone 6b)

mmmmmm stuffed cabbage

Had cheesesteaks sans bread

Hillsborough, NC(Zone 7b)

Whiting, lima beans, cabbage. A "pale " dinner. THAT IS WHY I HAD THE CHOCOLATE CAKE! I needed some color!

East Bridgewater, MA

There are oh-so-many good reasons for chocolate cake, even just a small serving for caloric reasons (just cut back on bread the next day).

S of Lake Ontario, NY(Zone 6a)

I really am better, it's just a cold, I don't usually get sick, but when I do, I do!

South China, ME(Zone 5a)

Same here Deb, glad your feeling better....this is a busy week for you!!!!

Lower Hudson Valley, NY(Zone 6b)

Anyone surprised Paula Deen has diabetes??? Another self-inflicted 'disability'.

Thomaston, CT

My Mom has it & she's skinny.....age is a factor.....when she hit 90, pancreas didn't work as well.....

Mount Bethel, PA(Zone 6a)

Just saw that one of Paula's sons is hosting a "healthy food" cooking show. This should inspire his mom to move in this direction for her own daily food consumption.

Fairfield County, CT(Zone 6b)

Genetics is a factor in diabetes, too.

Lower Hudson Valley, NY(Zone 6b)

Do you really think age or genetics is the reason in this case? Diabetes is an epidemic in this country. It is simply because we are obese.

Hillsborough, NC(Zone 7b)

Hey Victor
No telling the reasons for Paula D's diabetes. May be genetics at work - may be nutritional - and may be a combo of the two. Others have pancreatic disease....others are pregnant!

I do have many patients who became diabetic in their middle years... lose weight... and are able to come off their medications

Others are thin as rails and have active lifestyles and healthy eating and yet are afflicted with diabetes.

Lower Hudson Valley, NY(Zone 6b)

Of course. But odds are, with her unhealthy cooking and being overweight for years, it is the self-inflicted type. Obesity is an avoidable epidemic in this country that will cripple us financially in the future. I am not exaggerating when I tell you every other patient in the office of the ortho surgeon who did my knee was obese. They were all getting costly joint replacements. Unfortunately, it is not being taken seriously enough.

S of Lake Ontario, NY(Zone 6a)

You are right Victor, many health problems due to weight issues. And smoking.

Lower Hudson Valley, NY(Zone 6b)

Yes. Those are my two major pet peves when it comes to health. A third one is dumb risk-taking.

Lower Hudson Valley, NY(Zone 6b)

The last group includes those who drink and drive, those who don't wear their seatbelts, as well as risky 'hobbies' like skydiving and rock climbing. All of these are mostly young people. Cannot tell you how many times I have heard about my wife's quadriplegics who fall into these groups. They are typically teens to early 20's. We all pay for their care for the rest of their lives - which could be 70 or more years.

S of Lake Ontario, NY(Zone 6a)

I had a friend who was a skydiver who had a friend making her 100th jump. All her family were there to celebrate it with her and watched her fall to her death because the chute didn't open. Sad. I'm too chicken.

Lower Hudson Valley, NY(Zone 6b)

Horrible. The 'good thing' about skydiving is that you never survive.

My wife has had a number of quads who were just cleaning their gutters!

Lower Hudson Valley, NY(Zone 6b)

Sorry for the sidetrack! Having ham slices and rise with black beans. Eat safely!! ^_^
