Slow roasted pork with pineapple, sweet potatoes, spinach salad.
The recipe called for pork shoulder and apple juice, but the shoulder offered by the butcher was too big so we got a loin instead, and used pineapple juice. Results were excellent. The meat fell apart so easily when we stuck a fork in it, we could almost call it pulled pork (or pushed pork?).

I have a horrid cold. Faced with a can of soup.......nah...even near death couldn't get me to eat the grandkid's fav chicken and stars. So, made a sandwich. Fresh guacomole spread on a bagel with a slice of prosciutto and a slice of a really good cheddar. I didn't have a tomato and too tired to wash up the fresh greens so skipped that. I think there was a smattering of flavor - which is really good for this cold--- it "felt" right anyway ;0)
