My son just went to Pizza Hut to get Pizzones. They look good so we are trying them tonight.

There are several different recipes to make this but i use a simple on the top of the stove one.
Porcupine Meatballs
1 1/2 pound lean ground beef
1 egg
1/3 cup long-grain rice, uncooked
1/4 cup finely chopped onion or onion powder
1/4 teaspoon garlic powder
1/4 cup seasoned bread crumbs
1/8 teaspoon pepper
•1 lcan tomato soup
3/4 cup of water
•Preparation:
Directions for porcupine meatballs
Beat egg and mix with spices . Add rice and bread crumbs, mix well. Now add 1 talb. tomato soup to meat mixture. Shape ground beef mixture into 1 1/2-inch balls.
Place remaining tomato soup into pan and add 3/4 cup of water, heat and drop meatballs into soup. Bring to a boil, then cover and reduce heat to simmer for 45 minutes. Serve over mashed potatoes.
So what's the porcupine connection??
I assume it's the way the rice sticks out of the meatballs once they are cooked....looks like quills.
I think all male porcupines who read that recipe will be very relieved.

Rosemary and olive oil grilled chicken, italian suasage stuffed pimento peppers, boiled potatoes, roasted corn.
The potatoes were the first of my harvest, I rushed it a little, but they were so good.

Sorry to make you all jealous, but we took our eldest son (21 years old) to Red Lobster to celebrate his promotion to a shift manager at the convenience store where he works. The food was wonderful. Got the crab bake.- worth the effort it took to crack open those snow crab legs.
Can always count on Red Lobstah to have good food. Congrats to your son!!
