Summer bbqing
Don't know about all of you, but 95% of all our cooking is now done outside.
Please share what your bbqing or cooking.
Wow. We don't BBQ anywhere near that often.
I usually max out at 75% outside, but it's not warm enough yet so I'm about 25% now..
Hamburgers on the grill tonight, w/ fries.
I hate getting the kitchen all hot when it hot outside. My kitchen faces west so MAN is it hot in there in the summer, esp if I forget to keep the blinds and curtains shut
My a/c vents into the kitchen/great room.
Understandable.., I have a large kitchen, about 12x15', but it's still too hot when the heat is on in the summer, even w/ the exhaust fan...
When we moved in here our friend looked around the kitchen and said where's the vent? UGH there is none. Then one day I was standing next to our pantry(it's a free standing one but attached to wall like a cabinet, know what I mean?) and I felt a breeze...I was like "no way" they had remodelled the kitchen and put the huge pantry in front of the vent....hubby had to take the pantry off the wall and run duct and put in a new vent over the top. THe major problem with this house it's a bi-level so all the living is on the 2nd floor except family room. Hubby is going to add another zone(eventually)
An extra zone AND help with your berm in one lifetime?!! ^_^

There is a strong tendency to idealize our fond memories from childhood.
But I really have thought this food issue through, and I think I have some useful info.
Back in the 1960's, when I was a kid, my family would cook just about everything on a little "Hibachi Grill" from June to Labor Day. Everything tasted terrific, and we would all be forelorn when it was put away when cooler air set in.
I'm not a scientist, but I suspect that one flavor factor was the fact that the coals were within just 1 inch from the food. The hibachi grill was rectangular, about the size of a computer laptop, and had 2 square grid plates that could be moved higher or lower at three different levels.

I sincerely think that the close proximity to the coals was a flavor influence, like with speciality pizza.
However it should be noted, from a health standpoint, that the Japanese (usually upperclass businessmen) suffer a statistically higher incidence of stomach cancer after indulging in this cooking method 365/year, due to charcoal/carbon issues, probably.
EDIT # 2 : The great majority of the char-broiled food that the Japanese consumed at that time was red meat (beef), and that article was over 20 years old, so it may be currently useless info ( I hate getting old and losing my specificity...dang!).

Not doing much outside grilling because I hate to light the grill....wimp, I know.....but I do love veggies cooked that way, so I have to be brave...or get an electric grill.....looking for something hot for tonight, because it will chilly again......maybe pasta.
I don't think that I have ever grilled anything - not since I was a child and forced to camp anyway.

Reynolds Wrap tin foil packets: Individual Chicken & veggie Packets.....no dishes!
1 chicken breast, 1 tab. dijon mustard smeared on top. Add potato slices, summer squash, carrots, zuccinni,(anything you desire) The only secret is to cut your veggie that cook fast large...such as s.squash & zucc. Your carrots and taters should be the smaller but the same thickness as each other as they take a little longer.
Flavor w/pepper or favorite spices. Place 2 ice cubes and a tab of butter on top of each packet. Seal well and grill on low for 20 - 25 minutes.
Love no dishes!
WC - the guys at work used to tell me the old boss was a real cheap dude. He liked to say that everyone was expected to use all six sides of looseleaf paper!
I've done chicken like that, Pixie, except it was chicken, mushrooms, scallions, cream & sherry.....
Oh man, that dude was seriously cheap!

Just did burgers on hubby's new grill but a yummy salad with blueberries and pecans with grated Jarlesburg cheese to go with it.
Chicken is a "gift" from the heavens....it can be turned into any cuisine, any style, any dish, it's just the best.
I always keep chicken breasts (purchased on sale) in the freezer....never regretted the purchases, ever.
I like those big costco packs and freeze them as well.. and totally agree.. so many different uses
Old store mgr that used to have in a store I used to work in made the managers bring in their own pens

Made chicken today with tomato sauce, mushrooms, onions, & green peppers...noodles & sauteed green beans....
