Yesterday was Greek Souvlaki breakfast for my birthday with wife, sons, my dad and wife's parents. That's the only time that would fit with everyone's work schedules.

My wife, sons and I are going out for Chinese food about 6:00 tonight. I haven't had to cook in 3 days. Not too bad.

I had to have my corned beef on Sunday, so Mom could enjoy it....don't know about tonight......Jen, the cookies sound different....I think I would like them!

Here's the recipe... I made them gluten fee using Pamela's Product Baking and Pancake Mix
I guess with the gluten free flour mix the dough was too wet so I wasn't able to roll it out so had to put in on by tablespoons

Irish Soda bread cookies
Ingredients
• 2 cups all-purpose flour
• 3/4 cup white sugar
• 1/2 teaspoon baking soda
• 1/2 cup butter
• 1/2 cup dried currants( I used raisins)
• 1/4 cup buttermilk
• 1 egg
• 1/4 teaspoon salt
• 1 teaspoon caraway seed
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.Combine dry ingredients in a mixing bowl. With a pastry blender, cut in butter until mixture resembles coarse meal. Stir in currants.
3.Mix in beaten egg. Pour in milk and mix with a fork to make a soft dough (may need a little more milk).
4.On a floured surface, shape dough into a ball and knead lightly 5 or 6 times. Roll out dough to 1/4 inch thick and cut into squares and triangles with a knife (approximately 2 inches in diameter).
5.Bake for 12 to 14 minutes or until slightly browned.

Sounds good Allison, I always buy the round rather than the brisket, and just use the packet of spices that come with it. I thought mine was the best ever this year. You're right, I only have enough leftovers for 1 person, and there were only 2 of us for dinner.

That's what's keeping me from being a vegetarian! If I didn't send home the leftovers with my folks, I'd eat them all! I guess I couldn't give up pork roast or schnitzel either :(
