Wow, you guys have been eating well! I'm impressed! I'm getting tired of cooking dinner at night. Poor Hank. He's actually a better cook than I am, but he doesn't jump to the task very often unless he's "invited" to. He got ziti and meat sauce with meatballs and a salad tonight. I skipped the pasta and had 2 meatballs with the salad. Last night we had burgers and the other half of the big salad. I loaded it up with tons of different veggies. Tomorrow night it will be the leftovers of the pasta from tonight. I love leftover nights.

My sister Sue came down for the day and we made lasagnas, brocolli stuffed chicken breasts, mashed potatoes, enchiladas, and coconut pineapple cakes. She just left.

We won't have to cook for the next few days, and she's great at cleaning up! It was fast and fun working together. We are going to try to do it once a month, except summer she says we have to spend the night so we can garden one day and cook the next.

Wow.....that's a good deal. Wish she lived closer. Pixie, the venison mincemeat would not be a fav....the only venison I actually liked was in a stew my aunt used to make. She soaked the venison overnight in milk.....the stew had mushrooms, turnips, little onions & lots of red wine......

she just meant clean the kitchen after cooking, that's the worst part about cooking.
she did it as we went, it was nice to be done and just relax and not have a mess like I usually do

here is the cake, these are 6" cakes, a nice smaller size
next time I would make it with 3 thinner layers, the frosting is cream cheese with coconut, but I might try whipped cream instead, yummy

My eldest son (age 21) and I went to IHOP for dinner today. I like to do that with one or both of our sons occasionally. I had the big steak omelet with harvest nut-n-grain pancakes. I gave one of the pancakes to my son. When I recorded everything I ate in Fitday.com using the nutritional info from IHOP.com, I was shocked. The calories weren't as bad as the sodium. Guess that's why we do something like this only occasionally.

Oh, it was very, very delicious.

I don't eat venison, and I don't like mincemeat of any kind but I am married to a old fashion country boy . I had listened to him hem and haw about never finding a good mincemeat pie for years now so I decided to try it. Considering I won't taste test this crap, I go by smell only, I knew it would be a challenge but heck....I like a good challenge:)
So off to the store I went, aquired the ingred. and for the next 3 hours I spent cutting, measuring , grinding and simmering until the pot was smelling like I though it should smell. ^_^
I got very high praises from not just DH but from DBIL and the 'Good Ol Country Boys" of the neighborhood....now im stuck with this job!

Oh, no...you are too good, Pixie. When my DH handed me a liver from a deer his son shot, I gave it right back to him & said, "You eat it, you cook it!" I think he put it out on the grill......ham & scalloped potatoes with succotash salad for tonight.

I still get 8-12 servings out of those little cakes, depending on the richness. That one was good enough to want a third serving! I resisted!
