Exercising when I get the chance.
I did that metabolic typing we were talking about awhile ago, found out I'm pretty much eating ALL the wrong foods. Which I did have a feeling I was but this just confirmed it. So basically I'm on a kinda atkins diet, No sugar, no wheat, only certain veggies and fruits. I'm hoping in 6 wks I see an improvement. I think I told you after I had that intestinal thingy I gave up desserts for 2 months and did not lose 1 pound!! Years ago I would have lost at least 5. I knew something was up.

I love pork loin on the grill... the easiest party food... sear each side.. move it to indirect heat ... poke a grill thermometer in it .. go to 160... pull it off .. let it rest... and eat the goods

I usually marinate mine in teriyaki

Sauce
1-2 green bell peppers, seeded and diced
1 (1/4 inch x 3 inch) strip red bell pepper, seeded and diced
2 medium yellow onion, chopped
3 stalks of celery chopped
2-5 gloves of garlic crushed
2 cans diced tomatoes
1 large can tomato sauce
2 teas.? Italian seasoning
1 teas.? red pepper flakes, or to taste
Simmer for at least an hour.


Meat
2 lbs ground beef
1-2 eggs scrambled
1/4-1/2 cup seasoned fine brad crumbs
Mix altogether and form 1/4" thick logs. Meaning, shape the length of the hot dog or torpaedo roll .
Brown your "LOGS" in a fry pan approx. 3-4 minutes per side. Drain on paper towel, then add to the sauce. Simmer in suace for another 45 miuntes. Serve on Hot Dog or Torpedo Rolls.

Veggie stir-fry with tortellini mixed in also.

Grilled spare ribs, potato/onion foil packets and salad.

Hint: cook spare ribs in a pressure cooker for 7 mins before grilling. The meat is sooo tender.

Made herb rubbed roast chicken, pea's, sausage-sage stuffing, mashed taters, a loaf of white bread, and a Strawberry Dream Pie.

Strawberry Dream Pie

1 graham cracker crumb crust
1- 8 ounce tub Cool Whip, thawed
1 small package of strawberry Jello
1 cup chopped strawberries
2/3 cup boiling water
1/2 cup cold water
ice cubes

In a large bowl, stir boiling water and Jello for 2 minutes or until Jello is completely dissolved. Mix cold water and ice cubes to make 1 1/4 cups; add to dissolved Jello stirring until slightly thickened. Stir in Cool Whip and strawberries with a whisk until smooth and refrigerate for 15 minutes or until Jello will mound. Spoon filling into pie crust and refrigerate until firm or about 4 hours. Garnish with fruit and serve.

Love that dream pie too, but once I found out what Cool Whip was made out of I can't eat it anymore.
Pizza( I wasn't supposed to eat it because my new meal plan, started to give me a headache) had a burger no bun at the ball game.

We're in charge of food at our community time after church tomorrow night and we're doing a Polish night in memory of Eric's Polish Mom.
I have galumpkis(stuffed cabbage) cooking in the crock pot now. I was almost done rolling them all and realized I forgot to put the egg in the mix UGH, I had to re roll all of them!!!

Mmm, stuffed cabbage! Hard to cook for one person, so I haven't been doing much except for soups & salads....I did do skinless, boneless chicken thighs baked with OO, mixed olives, lemon & oregano.. baked some sliced yellow squash with it, & asparagus from the garden.....tonight, it's back to homemade chicken soup & salad.
