Lynnie, it has been forever since I fixed a roast. I can almost smell yours!!!
It is hard getting a small enough beef cut for one person. Please help me. How do you do yours? Type of beef cut? Everything in together? Any liquid to start? Oven temp.? How long? Do you cut your veggies?
In a few minutes I am going over to the grocery to get the meat specials for today only. The only meat I have left in my freezer is ground chuck from Sept. 6, 2009. I assume that is ok. Will use that next. I am going to package the meat I get today into individual packages so it will be easier for me to use.
Venice, I can tell you about chuck roast! You can buy a small chuck roast, brown it in a little oil and stick it in the oven at 325° for about 4 hours. Add some onion & water to the pan, a few of whatever spices you like & cover well.
After about 3 hours add some carrots (I like to halve mine), potatoes (I like to quarter mine), whatever you like, and let it cook for the last hour. If you put in veggies that don't take as long as the potatoes & carrots, add them later. Count backwards from the done time.
Old cooking rule ~ long & low for roasts, they come out more tender. I make this every now & then, the meat just falls apart. If you like gravy, you can take the stuff out & make a gravy out of the juices. If you don't eat gravy, just add a little bit of water before you cover it.
An old polish lady taught me that, about the long & low.
Smiley bring 'em along ;) DH can eat anything but white bread. I just whipped up a gravy (which my daughter and I are practically slurping ) so biscuits will be next.
Venice I got a beef round tip roast (supposed to be the more tender of the roasts but you cook 'em right they're all tender) I braised it in olive oil put it on a rack in a pan that was lined with foil. I cut up the potatoes, onions, mushrooms and threw a stalk of celery in there, all on the bottom of the pan. I put the meat on the rack over the cut up veggies. Then i dumped the olive oil from the braising over the veggies. It literally smelled like melting butter while it cooked. I had the whole pan tightly covered with foil. Oh I also put some garlic salt & pepper on the meat while braising it. My mother used to cook roasts like this, and we loved the oven roasted potatoes. You can ask the butcher to cup up your roast into portions. The roasts were buy one get one free, I couldn't pass up such a silly deal. I put one in the freezer.
long & low, that's true, Smiley, I cooked mine at 325 degrees for about 1 3/4 hour (2.7 pound roast). I put all my veggies in at once, though, and didn't add water, used the olive oil instead. the tight foil makes it steam. i also bought horseradish cream, I love it with thin sliced beef.
if you have a crockpot you can use that Venice.
oh I put rosemary on top of mine too

I bet it has been over 30 years since I made a roast. I remember one time when I was in my twenties I forgot to take the meat out of the freezer. I was going to be gone more than 2 hours. So I took that frozen block, salt and peppered it, put it in a large baking dish with a lid (even though one edge stuck up a bit), and put it in the oven on a very low temperature. I think it must have been about 275 degrees. When I got back, that roast was wonderful and for some reason it even browned. The best I ever made!

Lynnie, I love rosemary. I make chicken cordon bleu and use rosemary. I like your way of doing the roast, I don't have a rack that would sit high enough to put anything underneath. Hmmm... may have to go to my favorite store...

I love to do that in the winter. Put it in the oven & fuggetaboutit.
yeah it's definitely a winter meal. Plus it will be good for all kinds of sandwiches now, too, open face roast beef with gravy, cold roast beef with horseradish spread and hot & sweet peppers (drooling over that one) biscuits & gravy....boy I'll need 2 hours at the gym.
As long as you enjoy both, it's all good!
I love horseradish, I want my eyes to water when I eat it. Don't normally like my food to spicy, but the hotter the better with horseradish.

Thinly sliced delectable roast beef piled high on a 'kimmelweck' roll. A kimmelweck roll is a hard roll with caraway seeds and coarse salt on the top, baked in.
Some places put too much salt on the weck rolls, I scrape it off. Then you take the top of the roll and dip it in au jus and slap some horseradish on it and eat it.
The au jus drips down to your elbows if it's made right.

Good morning every-bod-eee. Been playing with sesame street stuff in the attic....so peaceful up there....if i pulled up the ladder they couldn't bother me at all....DH and GS both in a funky mood....think it has something to do with cleaning....grin.

News update...Imazadi's laundry room caught fire in the middle of the nightWednesday/Thursday. She and daughter escaped without injury, damage limited to laundry area/her bedroom wall...power off for safety measures. Appears to have taken out her closet also. Keep her in your thoughts and prayers.

Imazadi, I am so sorry about your house. Thankfully you and your daughter escaped unharmed. I can't imagine how horrible that must be to experience a fire, to have the all that fire and smoke damage to your house and clothes, to take care of all the repair work, and also to go through all the emotional stress of the fire and afterwards. My thoughts will be with you as you manage to get through all the affects of this fire. Peace be with you.
