I planted some eggplant plants several weeks ago. The leafs are turning yellow. We did have about a week of rain and it was cool. Now it has warmed up to normal temps. It is sunny.

Probably just transplant shock or a reaction to the changing conditions. I don't know how much rain you got during that week, but I know people in some parts of the country have had tons of rain lately which is a bit stressful for some plants. Now that it's warmer and sunny, just make sure you're watering it properly (best thing to do is the finger test--stick your finger down a couple inches near the roots and see how wet it feels)
