I just purchased a couple of Tomatillo plants and transplanted them last week and just noticed a blossom on one of them, the plant is only about 7" tall. Should I leave it be or pinch it off? Is this unusual for it to be blossoming so soon?

That plant was most likely stressed out a bit, causing it to flower so early. Yes, you can pinch the flower off with no harm done. Tomatillos will produce an abundance of flowers and fruit so fear not, you should end up with a good amount before the season is over.
I also hope you planted your other Tomatillo near the first one as they'll need each other for pollination.
