HELP! Inherited these beautiful shrubs in a divorce. The ex was the gardener. Is this something that needs to be pruned back, or should I just let them grow?

I always check multiple sources and find the information that is common to all to be the facts. The rest of the information that does not jive I will ask local nursery personell about thier personal experiences with the plant(s) in question. Also you can try to find someone who is growing it locally and ask them about thiers. It is a great way to start a conversation. Welcome to the wonderful world of gardening, sorry bout the method in which you arrived. Almost forgot, see if there is a local gardening club in your area, I have found that attending some of those meetings with a list of questions will get you a lot of information you can take as gospel. The club members are normally very serious about getting us the most accurate information availible, sometimes to a fault. Take pad and pen you will need it! Hope this helps.
