Could anyone please tell me how long it takes for the lemons on this tree to actually turn yellow? I have a Eureka lemon tree that the fruit has been green for what seems like forever..When will they turn yellow and actually be able to eat them?? Any help would be so greatly appreciated...

If you wait till the lemons are completely yellow they will be getting over-ripe.
When they are turning greenish-yellow, and you can feel that they are softening up, they are ready to use.
To speed things along and promote production, be sure to feed the tree a phosphorus (P) and potassium (K) rich liquid fertilizer (i.e. - "bloom booster") every month.
Environment has a lot to do with the speed of Citrus production. Here, it generally takes about six months for fruit to be ready, from the time of flowering.
