Hi,
I have about a 40' bare fence and want to put a hedge /shrub along the fence and I am unsure what to use. I purchased 3 Pineapple Guava shrubs, but unsure if they will give me coverage we want. It is a sunny location with sandy soil. Do you have any recommendations on what you think we should use? Oh I am in zone 8b.

I think you should use small groups of different shrubs and trees with the trees situated to give privacy from the neighborhood. It is always nice if the shrubs and trees are fruit and nut bearing too. I've no idea what would grow in your area, but your local garden centers and nurseries do. Best of luck.
I've seen pineapple guava used as a hedge. Sounds like you'll need a few more of it or something else though if you've got a 40 ft fence to cover. I'm with JuneyBug on using some different shrubs and trees, the garden is more interesting that way, plus then if a pest or disease comes in, it won't take out your entire hedge only part of it. I don't know what height you're going for, but other shrubs I see around here used as hedges include Rhaphiolepis (Indian Hawthorne), Callistemon (bottle brush), Photinia, variegated Euonymus, crape myrtle (the shorter ones, not the ones that grow up to be trees).
