Hi, Can anyone PLEEEEEEEEEEASE tell me what the bean inside the pod is called when you let the green bean mature to a large brown speckled bean? Also, are you suppose to eat the actual brown bean when they mature to this point? My green beans matured to
this last season when I got behind with my garden and they looked just like the seed you plant to grow the green beans!
Can you cook/eat them like a pinto bean at this stage of maturity?

You can cook them or plant them. ;)
The bean inside the pod is called the bean, the pod is still called the pod, from what you describe, letting the veg plot get behind has caused the beans to go to seed, that is the brownish been you find inside the pods, you can still eat them in casseroles, stews, soups etc but they will need cooking for longer than they would have had they been picked young and tender state. the veg plot does unfortunately need even more attention when things start to reach maturity or picking time and with lack of water, the plants can run to seed rather fast, At least you know why your beans are like this and like me when I started out, you soon learn by your mistakes, so even if you dont have much time on your hands when things are getting close to picking, you can always just try pick a few things each day and freeze them, seems a shame after all your hard work not to enjoy your veg later on when things are out of season. You can dry your beans off by removing them from the pods, once dried they can be replanted later if stored in a cool dry place. Hope this has not put you off, add lots of manure / compost to your bean rows at planting time and this may help to stop them going to seeds to quick as the compost will help retain moisture in the soil for longer when you dont have too much time to water every day.

With pinto and lima beans i let them get to the dry stage on purpose. That way i know how and when they were grown. So if you ignore them cook them anyway. Have fun
